RICETTA DEL PANE IN GHISA SENZA IMPASTO
In una ciotola grande, unisci farina, sale e lievito. Versa l'acqua tiepida e, usando un cucchiaio di legno, mescola fino a ottenere un impasto appiccicoso. Se non è appiccicoso, aggiungi altra acqua, un paio di cucchiai alla volta, fino a raggiungere la consistenza desiderata. Copri con un canovaccio pulito e tieni in un luogo privo di correnti d'aria per 18-24 ore.
Infarina leggermente una superficie di lavoro. Rimuovi delicatamente l'impasto dalla ciotola. Forma una palla con l'impasto, ripiegando delicatamente i lati sotto. Metti l'impasto su un grande pezzo di carta da forno. Copri con un canovaccio pulito e lascia lievitare l'impasto per 1-2 ore, fino al raddoppio. Preriscalda il forno a 475°F. Metti una cocotte media in ghisa nel forno mentre si preriscalda.
Rimuovilo con cura dal forno quando è caldo. Usando i lati della carta da forno come manici, abbassa delicatamente l'impasto nella cocotte. Copri la cocotte, mettila nel forno e cuoci per 30 minuti. Rimuovi il coperchio e continua la cottura per altri 20-30 minuti, finché il pane non sarà di un colore dorato. Togli il pane dalla cocotte e lascialo raffreddare per 1 ora prima di affettarlo e servirlo.
