دستور پخت نان چدنی بدون ورز دادن
در یک کاسه بزرگ، آرد، نمک و مخمر را با هم مخلوط کنید. آب ولرم را اضافه کنید و با استفاده از یک قاشق چوبی، مخلوط را هم بزنید تا به صورت خمیر چسبنده درآید. اگر خمیر چسبنده نبود، کمی آب بیشتر، چند قاشق غذاخوری در هر بار، اضافه کنید تا به این حالت برسد. روی آن را با یک حوله تمیز آشپزخانه بپوشانید و در مکانی بدون جریان هوا به مدت ۱۸ تا ۲۴ ساعت نگه دارید.
سطح کار را کمی آردپاشی کنید. خمیر را به آرامی از کاسه خارج کنید. خمیر را به شکل یک توپ درآورید و به آرامی کنارههای خمیر را زیر آن جمع کنید. خمیر را روی یک تکه بزرگ کاغذ روغنی قرار دهید. روی آن را با یک حوله تمیز آشپزخانه بپوشانید و اجازه دهید خمیر به مدت ۱ تا ۲ ساعت استراحت کند تا حجم آن دو برابر شود. فر را روی ۴۷۵ درجه فارنهایت گرم کنید. یک قابلمه چدنی متوسط را درون فر قرار دهید تا هنگام گرم شدن فر داغ شود.
با دقت آن را هنگامی که داغ است از فر خارج کنید. با استفاده از کنارههای کاغذ روغنی به عنوان دسته، خمیر را به آرامی داخل کوکوت پایین بیاورید. درب کوکوت را بگذارید، آن را داخل فر قرار دهید و به مدت ۳۰ دقیقه بپزید. درب را بردارید و به پخت ادامه دهید به مدت ۲۰ تا ۳۰ دقیقه دیگر، تا زمانی که نان به رنگ طلایی قهوهای درآید. نان را از کوکوت خارج کنید و اجازه دهید به مدت ۱ ساعت خنک شود قبل از برش دادن و سرو کردن.
