Key Ingredients for Success
- Puff pastry: Use a 320g sheet of ready-rolled for convenience
- Green cardamom: Crush 5-7 pods for fresh, fragrant spice
- Fresh raspberries: 225g total, with 50 reserved for topping
- Mascarpone: Creates a silky, rich cream layer
Step-by-Step Baking Instructions
Preheat oven to 200C (180C fan)/390F/gas 6. Unroll pastry on its paper and place on a baking tray. Score a 4cm border around the edge, prick inside with a fork, and brush border with egg wash. Bake for 10 minutes until puffy. Tap down the center and cool slightly. Reduce oven to 180C (160C fan)/350F/gas 4.
Mix softened butter, sugar, and crushed cardamom until smooth. Beat in one egg, then fold in ground almonds. Spread this frangipane inside the tart border. Top with 175g raspberries. Brush border again with egg wash, sprinkle demerara sugar, and bake 20-25 minutes until golden. Cool completely.
Making the Mascarpone Topping
Whip 220ml double cream, 120g mascarpone, 1 tsp vanilla, and 1½ tbsp icing sugar until just thickened. Spoon swoops onto the cooled tart and finish with remaining 50 raspberries.
