  • 1 sprig fresh herbs (mint, marjoram, or basil), chopped
  • Grated parmesan, to taste

Step-by-Step Instructions

First, pod the beans and set them aside. Cook the empty pods in a liter of salted boiling water for seven minutes. Lift out the spent pods with a slotted spoon and transfer them to a food processor, leaving the remaining bean stock on low heat.

Blitz the pods to a smooth paste, then push this through a sieve into a bowl; compost any fibers. In a second pan, melt the butter and olive oil over medium heat. Add the onion and garlic, cooking until soft but not browned, about 5 minutes.

Stir in the arborio rice and cook for 1-2 minutes until translucent. Add the white-wine vinegar (or white wine) and stir until absorbed. Begin adding the bean stock one ladleful at a time, stirring frequently, until the rice is creamy and al dente (about 18-20 minutes).

Fold in the broad bean pod paste, the reserved beans, fresh herbs, and grated parmesan. Serve immediately, garnished with a few skinned beans for color.
