How to Restore Kitchen Knives!, there are five basic steps to restore an old knife:

  • Finding a knife worth restoring
  • Remove the rust
  • Restore the sheet
  • Restore the handle
  • Sharpen the blade

I like old knives, because they are often of good quality, and they are cheap. They were made before the time when stainless steel and plastic handles became the norm; so, instead of mediocre knives, you will find carbon steel and wooden handles.

But, if you're looking for a fun and easy project, restoring an old knife really is perfect.

The rust can be removed, the handle restored/replaced, and as long as there is life left in the blade, you can have a super sharp knife that will cut 3 times faster.

Step 1: Find Good Quality Knives

The most important step is to find a good knife. Look at outdoor markets, then thrift stores, then antique stores and online.

What to look for:

  • Basically I look for rusty blades and wooden handles. If the knife has a decent weight to it and feels balanced when you pick it up, that's good.
  • If the handle is made of a dark wood (walnut, rosewood, ebony, etc.), this usually indicates that it was not the cheapest knife when it was new.
  • A knife that is over 50 years old and stamped with the maker's mark should be decent. If the knife has survived 50 years without being thrown away, there is probably a good reason.
  • The tang of the knife will tell you more about the knife and its quality. On a full tang knife the blade will extend through the handle to which it will often be attached with metal rivets. This is very good. Japanese knives are usually half tang but the blade is laminated steel and they are incredible. Grab as many as you can find.
  • A magic combination is an old knife with surface rust but no deep indentations (especially near the edge), with a wooden handle that is not split/cracked, and with a blade that still has some life.

What to avoid:

  • I avoid plastic handles and stainless steel blades, but that's my preference. Any leaves that are very bent or cracked, let them pass.
  • Many old knives will have been sharpened so much that they no longer have much life left in them. Even if they can be sharpened, the blades will be very thin and you will not have a true chef's knife.
  • If the blade is quite worn, but is from a well-known manufacturer (like the Henckel knife in the photos), the knife may be worth purchasing.
  • Don't worry too much if the blade is not very sharp or if the edge is rough.
  • Repairing or replacing a wooden handle is not very difficult if you have some basic tools.

Styles and Stamps:

  • There are many different types of knives for different purposes. There are small paring knives, steak knives, serrated bread knives, versatile chef's knives of different sizes, butcher knives, thin fillet knives, and sashimi knives with a flat side, and there are many other more specialized knives of all shapes and sizes.
  • With a little research on the Internet you can catch up.
  • If there is a stamp, stamping, engraving on the blade, or a logo on the handle, you will be able to identify the brand and know if the knife has any value. A knife with Asian characters will usually be worth grabbing.

I recommend purchasing a few knives to practice sharpening – the rest of the process is pretty simple and straightforward.

Step 2: Remove Rust, Restore Blade

The first thing I do is remove the rust from the blade. In the past, I spent a lot of time sanding rust, but now I use a solution of citric acid and water to dissolve it.

The advantage of this method is that it is less abrasive than sanding, which helps maintain the seal/stamping, and the solution can reach places that are difficult to clean by hand.

Dissolve rust:

  • Pour a few tablespoons of citric acid into a tall container, fill it with warm water, and submerge the leaf. If the handle is made of wood, avoid getting it wet.
  • If it gets wet, it can swell and eventually crack.
  • Wait a couple of hours, scrub the blade with steel wool or a rough sponge. Continue soaking and scrubbing the blade until all the rust has dissolved.
  • Next, sand the blade by hand, starting with 320 grit. A thorough, glossy polish will take some time. Be careful not to cut yourself if the blade is sharp.

Step 3: Restoring The Handle

Wrap the edge with tape, especially if it is sharp. You will cut yourself if you don't do this. When this happens, you will not only have blood on the handle, you will have a handle stained with blood. Yes, blood leaves stains.

Clean and sand the handle:

  • When I first started refinishing handles, I used to sand them with 220 grit paper and would go on to finish them with 600 – 1000 grit wet sanding. Now, I usually start with #0000 steel wool.
  • This will remove any grime or dirt that is on the blade, without removing much of the patina that the wood has accumulated over the years.
  • It takes a long time, especially in tight, hard-to-reach corners, but I like the results and the finish this gives the handle, and I don't have to worry about removing too much wood and changing the shape of the handle.

Protect with oil:

  • Once the handle is well sanded and cleaned (along with the rivets and tang as well), it is ready to be protected with an oil finish. I usually just apply a few coats of mineral oil.
  • Boiled linseed oil is another effective finish, and this will harden so it won't be as "wet" as other types of oil.
  • I prefer these types because they are natural, but you can do whatever you want with your knife.

I always leave sharpening the blade until last, since even with the edge wrapped in tape, it is still possible to cut or stab yourself while restoring the handle.

Step 4: Reform El Filo

If the edge of the blade is not straight, if it is chipped or rough, you will need to train it a little before you can sharpen it.

For damaged leaves, it is usually necessary to start with very very rough stones in order to restore the shape of the leaf and remove the roughness. Some old knives will have concave middles.

To fix this, place the knife perpendicular to the stone and 'cut' it as if it were a loaf of bread.

This will remove the concave part but will completely dull the blade.

Don't do this unless necessary–it will take the roughness out of the knife but it's not good for the stones.

It's helpful to trace the new shape with a marker so you know how much material to remove and where.

Step 5: Sharpening

Bezelon each side of the edge to hold the blade almost flat on the stone. Focus on one side until a burr forms and then turn it over and sharpen the other side. Continue with the rough stones until the edge is sharp along the entire length of the blade.

If one part (like the curved tip) is less sharp than the others, focus on that.

As you work from rough stones to softer ones, the edge should become sharper and sharper. If it isn't, go back to the last stone and fix it. If you are not comfortable sharpening your knife, take it to a professional sharpener.

But remember–just because you pay someone to sharpen it doesn't mean they know what they're doing. If you value your knife, beware of people who use electric grinders to sharpen, as these can remove too much material, which will drastically shorten the life of the knife.

Knife sharpening is a real thunderclap and it takes time to learn to do it right.

My advice is to buy a set of stones and practice, practice, learn by experience. There are various shortcuts and devices that can be purchased for sharpening, but I am not convinced that they are necessary or very effective, and they are often complicated and expensive.

Or you can pay a sharpener to do it for you.

I had a bad experience with the local sharpener and have since decided to do it myself.

The most important aspect of the technique is maintaining a constant bevel. At first it is very easy to round the edge.

A carbon steel knife needs special care, otherwise it will discolor and rust.

After using the knife, clean and dry it! Any acidic food will stain and darken the blade. This will happen within a very short time, so it is important that you clean the knife after each use.

Never store it when it's wet, ever. Store knives point-side down on a block, so the blades are not in contact with anything.
