Keto bread is a type of low-carb bread . Similar in appearance and use to traditional bread, it's made without grain flours. Instead, it uses almond flour and eggs, among other ingredients.

This time, we've opted for a keto loaf to make it super easy. Plus, we'll only be using a few ingredients, and almost all of them are easy to find. The only ingredient that might be less familiar is xanthan gum, a naturally occurring soluble fiber that thickens and binds mixtures, such as those used in gluten-free or low-carb bread doughs, as in this case.

This helps the bread retain more moisture, preventing it from drying out too easily. Xanthan gum can be purchased at health food stores and in the diet and nutrition sections of supermarkets.

This keto sliced bread is ideal for making toast , a sandwich, or a delicious low-carb snack.

  • 115 g of melted butter
  • 25g of extra virgin olive oil
  • 200g of almond flour
  • 15 g of baking powder
  • 6 g of fine salt
  • 1 teaspoon of xanthan gum

How to make the keto sandwich bread

First, preheat the oven to 180°C (350°F) with the top and bottom elements on. Grease the baking pan with a little oil or butter and set it aside until needed.

In a large bowl, crack 7 eggs and, using a whisk, beat them at high speed for about 3 minutes. The eggs should be very frothy.

Next, add 115g of butter melted for a few seconds in the microwave and cooled to room temperature, 25g of extra virgin olive oil and continue beating for a couple more minutes.

Now add 200g of almond flour, 15g of baking powder, 6g of fine salt and 1 teaspoon of xanthan gum.

We continue beating at a lower speed, just enough to integrate the ingredients until we achieve a smooth and homogeneous mixture.

We poured the resulting mixture into the greased baking pan and placed it in the oven on the second rack from the bottom. We baked it for the first 10 minutes at 180°C with heat only from the bottom, and then with heat also from the top for another 35 minutes.

To check if the bread is done, insert a toothpick into the center. If it comes out clean, remove the bread from the oven and turn it out to cool more quickly. Once your keto bread has cooled to room temperature, you can slice it to make toast or a delicious sandwich.
