Chia pudding is a great way to easily and deliciously incorporate these seeds into your diet . As we mentioned in our article about Chia seeds properties.
Chia seeds are a nutritionally rich food. However, to fully enjoy their health benefits, you should either grind the chia seeds before eating them or soak them, as we do in this pudding—a much simpler, more pleasant, and delicious option.
When you hydrate chia seeds, you get a mixture with a thick, gelatinous texture, similar to pudding . While it's true that these seeds don't have much flavor on their own, the appeal of this recipe lies in the fact that, starting with the basic mixture of chia seeds and milk, you can add all sorts of ingredients to taste to make it more flavorful and appealing.
In the recipe we're presenting below, we're going to infuse the milk with cinnamon and lemon to achieve an irresistible touch that eliminates the need for any additional sweetener or flavoring .
This pudding is very easy to prepare and can be customized to your liking with an unlimited variety of flavors and ingredients. For a quick and easy version, simply mix chia seeds with milk, which can be any type: cow's milk or plant-based milk. You can also add yogurt or kefir instead of milk.
For flavoring, you can add ground cinnamon, turmeric, vanilla extract, the zest of a citrus fruit like lemon, orange, or lime, and even cocoa powder. And to sweeten it, if you wish, you can use your preferred option, from regular sugar to honey, agave syrup, maple syrup, or any other sweetener to taste.
The easiest and most delicious way to enjoy this pudding is chilled from the refrigerator. To do this, once you've made the basic mixture, leave it in the fridge for a few hours, or even overnight , so you have a delicious breakfast ready in the morning. This will also ensure the chia seeds are fully hydrated and retain their characteristic pleasant texture.
When serving, to decorate and add extra flavor, you can accompany the pudding with fresh fruit of your choice, dried fruit, nuts, pieces of dark chocolate, or a spoonful of jam. It's delicious any way you serve it!

Ingredients of chia pudding
For the basic mix:
- 4 tablespoons of chia seeds
- 400 ml of milk
For aromatization (optional):
- 1 cinnamon stick
- The peel of half a lemon
To sweeten and accompany (optional):
- 4 teaspoons of sweetener to taste (agave syrup, maple syrup, honey, sugar...)
- Strawberries and blueberries or any other fruit of your choice

How to make the chia pudding
We divided 4 tablespoons of whole, uncrushed chia seeds into 4 small glasses.

We divided 400 ml of milk among the 4 small glasses. If we want to achieve a truly delicious flavor and result, we can flavor the milk before adding it, as explained in the next step, although this is entirely optional.

To flavor the milk, heat it in a saucepan with the peel of half a lemon and a cinnamon stick until it boils. Remove from the heat and let it steep for about 15 minutes. Remove the lemon peel and cinnamon stick, and divide the milk among the small glasses with the chia seeds.

If you want to sweeten it, add 1 teaspoon of your preferred sweetener to each glass. Stir and let it sit for 15 minutes. Stir again to prevent lumps from forming, cover the glasses, and leave them in the refrigerator for at least 3 hours or overnight.

When serving, we accompany the pudding with strawberries, blueberries or any other fruit to our liking.

We served and enjoyed this delicious breakfast.
