While this doesn’t hold true for every cat, mos cats don’t like their bellies to be to be touched. The reason they show their bellies sometimes is actually a sign of trust. So they’re showing it because they know you won’t touch them and that is a way to show their affection towards you.

You see cats usually sleep with one eye open and are always half-conscious so they can keep a lookout over their surroundings. After all, they are predators and will not let anything pass them by.
