Eggplant pizza is basically a recipe where we replace the typical traditional pizza dough with slices of eggplant , which form the base for the other ingredients. These ingredients can be as varied as your imagination and dietary preferences allow.
Today we made them classic, but other times we add tuna, cherry tomatoes, or a combination of cheeses. This is a very versatile recipe, so we like to prepare them with a different flavor each time, just like with the Low Carb Keto Pizza Recipe.
For this recipe, we used homemade tomato sauce , although you can also use a good store-bought tomato sauce if you want to save yourself a step, mozzarella or Parmesan cheese, and black olives. We flavored the tomatoes with herbes de Provence, although other times we use oregano or fresh basil leaves.
This is a great recipe to serve as an appetizer or first course , although if you make more substantial eggplant pizzas with a protein topping like tuna or shredded chicken, for example, they can work perfectly as a main course. It's important, however, to serve the eggplant pizza freshly made to enjoy its perfect texture.

Ingredients for eggplant pizza
- 1 eggplant
- Salt
- 1 tablespoon of olive oil
- 100g of tomato sauce
- 1 tablespoon of herbes de Provence (or other herbs you like)
- 100g of mozzarella
- 1 tablespoon of sliced black olives

How to make the Eggplant Pizza: Step-by-step
Wash and slice 1 eggplant into 1 cm thick rounds. Salt the slices on both sides and let them rest for half an hour; this will remove their bitterness and give them the perfect texture when baked. Preheat the oven to 180 °C.

Pat the slices dry with paper towels, brush them with 1 tablespoon of oil (spray works fine), and arrange them on an oven rack (this allows for better air circulation than a baking sheet). Bake for 30 minutes. If you don't have a rack and are using a baking sheet, turn them over halfway through baking.

We mix 100g of tomato sauce with 1 tablespoon of herbes de Provence and cover the eggplant slices with this mixture.

We spread 100g of mozzarella over the tomato sauce and finish with 1 tablespoon of sliced black olives.

We bake the eggplant pizzas at 180°C for 15 minutes until the cheese is melted.

We serve them hot so you can enjoy them freshly made, which is when they taste best.
