As its name suggests, cloud bread is an airy bread, just like clouds —very light and fluffy. It's a great option for a quick and easy homemade bread, perfect for those looking for keto bread or for those who can't consume gluten.
This bread is made with just three ingredients : eggs, cream cheese, and baking soda. This is the base of the bread, to which you can add salt if it's going to be used in a savory recipe, or sugar, along with a pinch of salt, if it's going to be used in a sweet recipe.
On social media, colorful cloud breads made with food coloring are a huge hit, as are cloud breads with spices or dried herbs. We're sharing the basic recipe so you can customize this bread to your liking with food coloring or spices to create more vibrant loaves.

Cloud bread ingredients
- 4 eggs
- 110g of cream cheese
- ½ teaspoon of baking soda
- ½ teaspoon of salt
- 1 teaspoon of sugar (omit for keto diets)

How to make cloud bread
To begin, we'll use 4 eggs at room temperature so the whites whip up better. We'll need two large bowls, one for the whites and one for the yolks. Carefully separate the egg whites from the yolks, making sure no yolk gets into the whites or they won't whip properly.
Whisk the egg whites to stiff peaks with ½ teaspoon of salt, using a whisk until they are firm. Next, add ½ teaspoon of baking soda and continue whisking until the baking soda is fully incorporated.

On the other hand, to the bowl with the 4 egg yolks we add 110g of cream cheese and 1 teaspoon of sugar.

Beat these ingredients well until there are no lumps. You can take this opportunity to preheat the oven to the correct temperature when you put the bread in.

We'll fold the whipped egg whites into the yolks with cheese. We'll do this gradually to avoid losing the airy texture of the egg whites. So, we'll start with just a spoonful and mix slowly.

From this point on, we gradually incorporate the rest of the whipped egg whites with gentle folding motions.

We prepare a baking tray and line it with parchment paper. We make 6 even mounds with the cloud bread dough, making sure to leave space between the loaves.

We bake the cloud breads at 180°C, with heat from both the top and bottom, for 30 minutes. Once baked, we wait for them to cool slightly before removing them from the baking paper.

Cloud bread keeps in the refrigerator for 5 or 6 days and is ideal for filling as desired or using as toast.
