Few things are as delicious as bread. However, many people can't eat traditional bread, so the gluten-free and flourless version we're proposing below is perfect for them. It's also a very quick solution for enjoying a delicious roll in under half an hour .
We just need to mix a few ingredients , shape the rolls, and bake them. They're perfect for sweet or savory fillings if we want to make small sandwiches, or to accompany different types of food, just like any other bread.
With this recipe, you'll get rolls with a crispy crust and a soft, fluffy crumb . The only secret to getting them right is to keep a close eye on the oven because they burn quite easily, although nothing that can't be fixed by covering them with parchment paper or aluminum foil once they're golden brown enough.
We can enjoy this flourless bread with any meal or slice it open to make small sandwiches, as it can be filled with all sorts of things, both sweet and savory. We filled ours with smoked salmon and they were delicious.

Ingredients for flourless bread
- 1 egg
- 1 tablespoon of chemical raising agent
- 6 tablespoons of powdered milk (regular or skimmed)
- 1 pinch of salt (optional)

How to make bread without flour
In a large bowl, combine 1 egg, 1 tablespoon of baking powder, 6 tablespoons of powdered milk, and a pinch of salt.

Mix with a spatula or a fork until you get a homogeneous mixture.

Line a baking sheet with parchment paper and form four mounds with the mixture, shaping them into roughly rounds. Using the back of a spoon moistened with water, you can finish shaping the rolls so they look nicer after baking.

We bake the flourless bread for about 15 minutes at 180°C (350°F) in a preheated oven, watching carefully to make sure it doesn't burn. If it browns too much on top, we can cover it with parchment paper or aluminum foil. We remove the rolls from the oven and let them cool slightly on a wire rack or plate before serving with a filling of your choice.
