- 120g of butter at room temperature (and a little more to grease the waffle iron)
- 2 medium eggs at room temperature
- 40 g of corn starch
- 40 g of potato starch
- 50g of rice flour
- 2 g of xanthan gum
- 10 g of baking powder

How to make gluten-free waffles
Beat 120g of sugar with 120g of butter at room temperature using a whisk until the sugar is well incorporated.

Add 2 medium eggs, one at a time, so that they blend well while beating.

Add 40g of corn starch, 40g of potato starch, 50g of rice flour, 2g of xanthan gum and 10g of baking powder, whisking just until mixed.

Heat the waffle iron, grease it with a little butter, and place 2 tablespoons of batter in each cavity of the machine. Close it and cook for 2-3 minutes.

We remove them when we see that they are golden brown, without prolonging the time.

We remove them to a wire rack and repeat until all the dough is used.

We serve freshly made gluten-free waffles decorated to your liking.
