Today we invite you to discover and prepare a traditional recipe that should be a staple in your culinary repertoire: Extremadura-style chard. This recipe, originally from Extremadura, combines simple, flavorful ingredients to create a nutritious and delicious dish.
Its preparation may seem laborious, but it's easier than you think. You'll only need a few basic ingredients: fresh chard, potatoes, onion, garlic, eggs, paprika, and olive oil. Since Extremadura is known for its excellent paprika , it couldn't be missing from this recipe. This spice adds a very interesting smoky touch and color, as does the light gratinéed egg.

Ingredients of Extremadura-style chard
- 400g of chard
- Salt
- 1 onion
- 2 cloves of garlic
- 2 potatoes
- 45g of olive oil
- 1 teaspoon of sweet paprika
- 2 eggs

How to make the chard in the Extremadura style
We begin by washing 400g of chard. We also remove the strings from the stems with a knife.

Then, we cut them into small pieces, separating the stalks and leaves.

Next, bring a pot of salted water to a boil and cook the chard stalks for 5 minutes. Then add the leaves and cook everything together for another 10 minutes. Check that they are tender, drain them, and set them aside.

On the other hand, we cut 1 onion and 2 cloves of garlic into julienne strips, 2 potatoes into thin pieces and add salt.

In a saucepan or deep frying pan, heat 45g of olive oil and sauté the potato with the onion and garlic over medium heat for a few minutes, until everything is soft, stirring occasionally.

Preheat the oven to 200°C. Add 1 teaspoon of sweet paprika to the previous casserole dish, mix well, and then add the chard. Cook everything together for a couple of minutes.

We transfer the mixture to an ovenproof dish. Then, we beat 2 eggs with a pinch of salt and pour them over the top.

Finally, we bake the chard for 10 minutes at 200ºC on the middle tray of the oven and serve it freshly made.
