Pizza Oven, Garden Grill and Smoker 2026

A pizza oven is an excellent idea that you can make in the patio or garden of your home, this oven will surprise your guests in an incredible way.

Why smokehouse?
It allows you to create great meats, fish and healthy cheeses. You could create smoked meats that are long-lasting, preservative-free, and have a wonderful flavor.

I have created a smokehouse with two burners: one for cold smoke (less than 24 degrees Celsius) and one for hot smoke (up to 80 degrees Celsius).

Why grill?
Everyone is grilling in the summer.

Why pizza/bread oven?
The pizza/bread oven itself provides the opportunity to create traditional old-fashioned bread, Italian pizza and rolls. It's easy to use and I think creating the smokehouse without an additional oven would be a waste of space.

#1: Foundations

All in one: In this tutorial I will show you how to create everything in one: grill, pizza oven and smokehouse.

• First you have to make reinforced foundations. The entire construction will be quite heavy, so the foundation must be at least 30-35 cm deep.
• The reinforcement could be made with steel of 10-12 mm normal diameter.
• It is important that the bases are well leveled and covered with waterproof insulation.
• In my case, I have used something that is transparent, but it could be standard, black tar-based liniment like bitex.

#2: Building the walls and the pizza dome

• The walls of the smokehouse should be made of materials that do not accumulate heat.
• Otherwise, it will smoke more smokily to dry out and burn. It will also be impossible to reach the low temperature of the smoke.
• I have used the cheapest red bricks, but it could be any other material that can withstand heat like demolition brick or ceramic brick, etc.
• The pizza oven/bread oven has to be made of different material. This time, the material has to accumulate heat.
• It could be clay, clay brick, or (as in my case) special fire brick. Please note that these bricks also require a special mortar that is fire resistant.
• Brick construction is not a complicated process and you cannot bother with small details, as the entire construction will be plastered later.

#3: Lintels

• The easiest way to make lintels is to make them out of concrete.
• First you have to do the boarding, then the steel reinforcement and cover all this with concrete.
• One thing to remember is to put the fireplace in the pizza hearth. I have made the hole for the paper tube, which could be easily removed later.

#4: Chimneys

• Chimneys could be made from special metal pipes, which is the best way to do it.
• Those pipes are quite expensive, so I created the normal brick chimneys. It is also a good way, but such chimneys must be plastered from the outside and from the inside as well to prevent the "leakage" of smoke.
• One thing to remember is the diameter of the chimney.
• It should have a diameter of 15cm to provide good smoke flow for the smoking chamber.

#5: The main chimney/chamber

• I have created additional ledge between fireplaces and smoking chambers. As you can see, the cornice is made of bricks on the smokehouse part and concrete on the pizza oven part.
• This is because, in the pizza oven part, the cornice is also the last layer: the top.
• So I have made an approach that includes cornice, reinforcement and concrete cover.

#6: Smoking chamber – Meat hangers

• Meat hangers must be removable. I have created them from wooden sticks. It is important to use leafy trees for such sticks.
• On those sticks I hang some metal hangers that I made from special lids for jars, but that's because I've wasted so many of them. In normal case it is better to use stainless steel wire.

#7: That's all 🙂

• At the end, when the entire construction is dry enough, you can plaster your smokehouse. I have used normal sand, cement and lime plaster.

The important thing: Before using for the first time, you must turn on the entire home without the meat/cheeses, etc. This is very important as it will dry out the entire construction. If you don't, you'll have smoke stains on your walls, doors (where the steam will condense), and on your meats. Smoking will be ruined in such case. That's all.
