Grilled watermelon is one of those dishes that sounds unusual until you try it. The hot pan caramelizes the natural sugars on the surface while the inside stays cool and juicy, creating a texture that is completely different from raw watermelon. It takes only ten minutes from start to finish and works as either a starter or a dessert.

Because the flavor is so neutral and refreshing, grilled watermelon is a perfect base for both savory and sweet toppings. A crumbling of goat cheese and fresh basil turns it into an elegant appetizer, while a spoonful of honey yogurt and crunchy nuts makes it a light dessert. You can even serve it as a side dish next to grilled meat or fish.

The only real rule is to cut every slice to the same thickness so they cook evenly. You want them golden outside but still juicy inside, not soft all the way through. Once you have that down, the toppings are entirely up to you.
Ingredients for Grilled Watermelon
This recipe makes 3 servings and comes together in about 10 minutes total.
- 3 slices of watermelon
- 2 rounds of goat cheese
- Salt
- Ground black pepper
- A few basil leaves
- 2 tablespoons of yogurt
- 1 teaspoon of honey
- 1 tablespoon of chopped nuts, to taste (we used pistachios)

How to Make Grilled Watermelon Step by Step
1. Cut the Watermelon
Wash a watermelon and cut 3 slices about 2 cm thick, or as many as you need depending on the number of guests. Depending on the size of the watermelon, you can leave the slices whole or cut each one into 4 wedges. In our case, since we used a small watermelon, we left the slices whole.

2. Sear the Watermelon
Heat a skillet over medium-high heat and, once hot, sear the watermelon slices without adding any fat for 2 minutes per side, until they are golden but still juicy. You can use a grill pan if you want the grill marks, or a regular smooth skillet, whichever you prefer.

3. Finish the Dish to Taste
Once the watermelon slices are golden, finish the dish however you like. For the savory version, top the watermelon with a couple of crumbled goat cheese rounds and a few basil leaves, then season with salt and pepper to taste. For a sweet finish, mix 2 tablespoons of plain yogurt with 1 teaspoon of honey in a bowl and spoon this mixture over the grilled watermelon along with some chopped nuts.

Tips for the Best Grilled Watermelon
Keep the Slices Even
For this recipe to turn out perfectly, just make sure the watermelon slices are all the same thickness so they all end up with the same texture. That means golden on the outside but juicy on the inside. Once the watermelon is seared, you can pair it with savory or sweet ingredients according to your preference. In this recipe we show two very simple and crowd-pleasing options, though the possibilities are endless.
Savory Topping Ideas
For the savory version, we like to serve the watermelon with crumbled goat cheese and a few basil leaves that add an aromatic touch. Feta cheese works wonderfully too, as do fresh mint or spearmint. It is also very tasty with arugula and some black olives.
Sweet Topping Ideas
For the sweet version, this time we went with a yogurt and honey cream and added a crunchy touch with chopped pistachios, though you can use any other nut you have on hand. Mascarpone is also a delicious option, and with a scoop of your favorite ice cream you will get an impressive contrast of flavors and textures.
Grilled watermelon can be served in slices, triangular portions, or even cubed and skewered with a toothpick, an ideal solution for a crowd. If you have the chance to make it on a barbecue, on a grill over hot coals, it is delicious too. Either way, we assure you that once you try it, you will not stop making it.
