Ingredients for meatballs in almond sauce
For the meatballs:
- Half an onion
- 2 tablespoons of olive oil
- 450g of mixed minced meat (pork and beef)
- 1 egg
- 1 clove of garlic
- 1 tablespoon of chopped parsley leaves
- 40g of breadcrumbs
- Salt
- Ground black pepper
For the almond sauce:
- 1 tablespoon of olive oil
- 1 slice of bread
- 60g of almonds
- 1 clove of garlic
- 75 ml of white wine or sherry
- Salt
- 200 ml of meat or vegetable broth

How to make meatballs in almond sauce
We peel and chop half an onion.

Heat 1 tablespoon of olive oil in a frying pan and sauté the onion in it, over low heat, for 4 minutes, until translucent.

In a large bowl, we place 450g of mixed minced meat, the sautéed onion, 1 small egg, 1 crushed garlic clove, 1 tablespoon of chopped parsley leaves, 40g of breadcrumbs and season with salt and pepper.

Mix until you have a smooth mixture. Form 16 meatballs the size of a ping-pong ball.

Heat 1 tablespoon of olive oil in the same pan used for the onion and brown the meatballs for 10 minutes. Set aside on a plate.

Once the meatballs are browned, we prepare the almond sauce. To do this, we heat 1 tablespoon of olive oil in the same pan and fry 1 slice of bread with 60g of almonds until everything is golden brown.

Press down 1 clove of garlic, sauté it for a few seconds with the bread, and pour in 75 ml of white wine or sherry. Let it evaporate for 2 minutes over high heat. Add salt and let it cool slightly.

We blend the sauce until we obtain a smooth and homogeneous texture, while gradually adding 200 ml of meat or vegetable stock to thin the sauce.

Return the sauce to the pan, add the meatballs and cook the whole thing for 20 minutes.

After this time, we can serve and enjoy this delicious traditional dish.
