Ingredients for chocolate mousse cake for 8 people
- 100g of crushed biscuit
- 55g of melted and cooled butter
- 280g of 52% coco chocolate
- 400g of cold whipping cream (minimum 35% fat content)

How to make chocolate mousse cake
We begin by preparing the biscuit base. To do this, we mix 100 grams of crushed biscuits with 55 grams of melted and cooled butter. We will obtain a mixture similar to wet sand.

Grease an 18cm springform tin and cover the base with the shortbread mixture. Press lightly until even and set aside in the refrigerator.

We melted 280 grams of chocolate in the microwave, in 30-second intervals, until completely melted. We set it aside to cool slightly.

We put 400 grams of very cold whipping cream in a bowl. We whip the cream at medium speed until it is semi-whipped. We will know it is ready because the beaters will begin to leave marks, but it is not too stiff.

Add the melted chocolate to the cream in 3 stages, incorporating the chocolate with folding motions.

Once we have a homogeneous mixture, we pour it into the mold.

We smooth the surface of the cake with a spatula and put it in the refrigerator to firm up, for at least 4 hours.

After 4 hours, we unmold the cake and decorate it to taste, and we can now enjoy this delicious cold chocolate cake.
