They're the quintessential Spanish tapa and are usually a crowd-pleaser. The filling can vary, but they always turn out delicious.
We're talking, of course, about chicken croquettes , crispy on the outside and creamy on the inside, which can also be used to use up leftover roast chicken, as we've done in this recipe.
Croquettes, whether chicken or any other filling, always have a béchamel base, and preparing them at home, although it takes time, elevates the result to another level compared to industrial versions.

Although we feel they are very Spanish, the origin of this dish seems to be attributable to French gastronomy; the name comes from the French word croquette , derived from the verb croquer (to crunch), and although it was a luxury dish, in Spain it became popular and transformed into a humble recipe with simple ingredients .
Today we're going to make some fantastic chicken croquettes in the Thermomix, at least the first part of the recipe, because we'll do the second part the traditional way. You might be surprised that in this recipe, the ratio of wheat flour to milk is much higher than in traditional croquette recipes.
However, this is necessary for croquettes made with a Thermomix because, in this case, the béchamel sauce is made in a closed container with almost no evaporation, unlike the traditional version, which is prepared in a pan where the mixture is stirred with continuous evaporation.
Furthermore, the action of the blades during the thickening process in the Thermomix causes the starch structure of the flour to be constantly broken down. Therefore, to achieve a manageable dough that's easy to shape into croquettes, Thermomix croquette recipes require a larger quantity of flour. The good news is that in these croquettes, we've opted for a generous amount of chicken filling, so the result is going to be very tasty. You'll see!

Ingredients for chicken croquettes in Thermomix
- 350g of roast chicken (skinless and boneless)
- 75g of onion
- 2 cloves of garlic
- 60g of butter
- 110 g of wheat flour
- 400g of whole milk
- Salt
- Black pepper
- Half a teaspoon of nutmeg
- Wheat flour for coating
- 2 eggs
- Breadcrumbs
- 350 ml of sunflower oil (for frying)

How to make chicken croquettes in a Thermomix
Place 350g of roast chicken in the Thermomix bowl. Blend for 5 seconds at speed 5 and set aside in a large bowl.

In the same unwashed bowl, add 75g of onion and 2 peeled garlic cloves. Blend for 3 seconds at speed 5. Scrape down the sides of the bowl with a spatula.

Add 60g of butter to the bowl. Program 12 minutes at Varoma temperature and speed 1.

Add 110g of wheat flour and cook for 3 minutes at 100°C and speed 3 to toast it and remove any raw taste. This will create what is known as a roux .

Add 400g of whole milk, salt and black pepper to taste, and half a teaspoon of nutmeg. Program 4 minutes at 100°C on speed 3 without the measuring cup on the lid. If after this time you don't get a thick béchamel sauce, program another minute in the same way.

We transfer the béchamel sauce to the bowl with the shredded chicken and mix well. We taste and adjust the salt.

Spread the mixture in a dish and cover it with cling film, pressing it directly onto the surface to prevent a skin from forming. Leave the dish in the refrigerator to thicken, preferably overnight.

The next day, we took portions of dough with the help of two spoons and shaped them into elongated croquettes.

We coat all the croquettes with wheat flour.

Next, we coat them with 2 beaten eggs and finally, with breadcrumbs.

If you want to freeze the croquettes, or part of them, now is the time. Simply store them in a covered container, seal it tightly, and freeze.

Pour 350 ml of sunflower oil into a frying pan or saucepan and, when hot, fry the croquettes in batches of 4 or 5 at a time. Turn them until they are evenly golden brown.

We placed the fried croquettes on absorbent paper to remove excess oil.

Once we have fried all the croquettes, we proceed to serve them while they are hot.
