Cauliflower Migas Recipe: A Surprising Spanish Classic

Cauliflower migas is one of those Spanish dishes that surprises everyone at the table. Finely chopped cauliflower stands in for the traditional bread crumbs, then gets sautéed with garlic and sweet paprika until golden and fragrant. It is a humble, deeply savory dish that comes together in about 15 minutes.

This version is served as a main course with a fried egg on top, which makes it hearty enough for lunch or a light dinner. The runny yolk mingles with the cauliflower crumbs and turns each bite into something special. It is also a clever way to get more vegetables onto the plate without anyone noticing.

Because the cauliflower is chopped into small crumbs, it cooks quickly and absorbs all the garlicky, smoky flavor of the sofrito. Keep the heat moderate and stir often so the crumbs toast evenly without burning. A pinch of salt at the right moment brings everything together.

How to Make Cauliflower Migas Step by Step

1. Cut and wash the cauliflower

The first thing to do is cut 350 g of cauliflower into small florets and wash them well in a bowl of cold water. Drain them and pat them thoroughly dry, since excess moisture will make the crumbs steam instead of toast.

2. Chop the cauliflower into crumbs

Place the dried florets in a food processor and pulse until you get a crumb-like texture, then set aside. If you don't have a food processor, you can grate the cauliflower or chop it finely by knife. Some supermarkets also sell frozen cauliflower crumbs ready to use, which would save you these first two steps.

3. Sauté the garlic

Set a skillet over medium heat with 40 g of olive oil. Once the oil is hot, add 2 garlic cloves finely chopped and sauté for about 1 minute, taking care not to let them burn.

4. Add the sweet paprika

Next, add 1 teaspoon of sweet paprika and mix it quickly with the garlic and oil. Work fast so the paprika blooms in the oil without scorching, which would turn it bitter.

5. Add the cauliflower crumbs

Then add the cauliflower crumbs, mix well, and season with a little salt. Stir so every crumb is coated in the paprika oil.

6. Cook the mixture

Cook the cauliflower migas over medium heat for about 6 to 7 minutes, stirring continuously with a spatula. Then remove from the heat and set aside.

7. Fry the eggs

Lastly, fry 2 eggs. Set a skillet over high heat with 300 g of frying oil and fry the eggs one at a time.

8. Serve the cauliflower migas

Serve the cauliflower migas with the fried egg placed on top. To enrich the dish and make it more complete, you can also cook the eggs on a griddle or serve the migas with poached eggs, which would be just as delicious.

Tips for the Best Cauliflower Migas

Dry the cauliflower well

Moisture is the enemy of a good toast on the crumbs. After washing, pat the florets completely dry before chopping so they sauté rather than steam.

Watch the paprika

Sweet paprika burns in seconds. Add it off the heat or stir it in immediately and keep the flame moderate so it releases its color and aroma without turning bitter.

Choose your egg style

A fried egg on top is classic, but griddled or poached eggs work beautifully too. Any of them adds richness and turns the migas into a satisfying main course.
