Chop suey is a stir-fry of tender chicken and colorful crisp vegetables tossed in a glossy, savory sauce. It may look like classic Chinese cooking, but it was actually created in the United States by Chinese immigrants in the late 19th century, blending traditional techniques with ingredients that were easy to find in North America.

That history explains why the dish is so flexible. You can build it around chicken, beef, pork, fish or seafood, and pair it with whatever fresh vegetables you have on hand. This version uses chicken thighs with broccoli, carrot, bell peppers, scallion, garlic and grated ginger for a deep, rounded flavor.

How to Make Chicken Chop Suey Step by Step

1. Cut and Season the Chicken

First, cut 250 g of boneless, skinless chicken thighs into bite-sized pieces. Season the chicken with a little salt and a pinch of white pepper. Set the seasoned chicken aside to use later.

2. Julienne the Vegetables

Meanwhile, finely chop 1 garlic clove. Wash and julienne half a scallion — reserving the green part for garnish — along with half a green bell pepper, half a red bell pepper and half a yellow bell pepper. Peel 1 carrot and cut it into sticks of the same size.

3. Cut the Broccoli into Florets

Wash and cut 3 small broccoli florets into small pieces.

4. Stir-Fry the Chicken and Set Aside

Pour 2 tablespoons of sunflower oil and 1 teaspoon of sesame oil into a wok. Once the oil is hot, stir-fry the reserved chicken pieces over high heat. When the chicken is cooked through, remove it from the pan and set it aside.

5. Sauté the Garlic and Ginger

In the same oil used to stir-fry the chicken, sauté the chopped garlic and grate in 10 g of fresh ginger. Let these ingredients cook for a few seconds before you start stir-frying the vegetables.

6. Stir-Fry the Carrot and Broccoli

Add the carrot and broccoli to the wok, since these vegetables are firmer and need more cooking time. Stir-fry them over high heat for about 1 minute, stirring constantly to keep them from sticking. If needed, add 1 teaspoon of water to help the vegetables cook properly without burning.

7. Add the Rest of the Vegetables

Add the remaining sliced vegetables and cook them over high heat for 2 minutes, stirring constantly.

8. Return the Chicken to the Wok

Once the vegetables are stir-fried and still crisp, add the chicken you cooked earlier.

9. Pour in the Soy Sauce

Finally, add 2 tablespoons of soy sauce and stir all the ingredients together. Let everything cook for a couple more minutes so the flavors blend well.

10. Serve

Once the chop suey is done, sprinkle a little of the green part of the scallion on top for a touch of freshness. Serve immediately. You can pair it with boiled rice or noodles.

Tips for the Best Chicken Chop Suey

Prep Everything Before You Cook

For a great chop suey, a proper mise en place is crucial: have every ingredient prepared before you start cooking. The cooking process is very fast, so having everything ready is essential to the success of the dish.

Make It Your Own

You can adapt the recipe to your preferences by adding the vegetables you like best. If you want a spicy kick, add chile flakes, a sliced chile, cayenne or plenty of freshly ground pepper.

Get the Most Umami Flavor

The seasoning is simple but delicious: soy sauce combined with the sesame oil used for stir-frying and the juices from the chicken and vegetables creates a sauce with an irresistible umami flavor. Serve the chop suey with boiled rice or noodles for a more complete and nutritious dish.
