For 4 servings

  • 125 g onion
  • 75 g carrot
  • 30 g celery
  • 1 garlic clove
  • 2 tablespoons olive oil
  • 4 sprigs fresh thyme
  • Salt
  • 2 tablespoons tomato paste
  • 400 g ground beef
  • Ground black pepper
  • 80 ml red wine
  • 1 tablespoon Worcestershire sauce
  • 150 ml beef broth
  • 70 g cooked peas
  • 800 g potatoes
  • 50 g butter (at room temperature)
  • 100 ml milk (at room temperature)
  • 40 g grated cheddar cheese
  • 20 g grated Parmesan cheese

How to Make Cottage Pie Step by Step

1. Prepare the Vegetables

First, finely dice 125 g of onion, 75 g of carrot, and 30 g of celery into small, even pieces. Grate 1 garlic clove and set it aside.

2. Sauté the Aromatics

Place a pot over medium-high heat with 2 tablespoons of olive oil. Once the oil is hot, add the onion, carrot, and celery. Stir, then add a couple of sprigs of fresh thyme and a pinch of salt. Cook for about 10 minutes over medium heat until the vegetables begin to soften.

3. Add Garlic and Tomato Paste

Next, add the grated garlic and mix it into the sautéed vegetables. Cook for a moment, then add 2 tablespoons of tomato paste. Stir well and cook for about 5 minutes to deepen the flavors.

4. Brown the Beef and Deglaze with Wine

Add 400 g of ground beef and mix it with the vegetables. Cook until the meat changes color. Then season with salt and ground black pepper to taste. Raise the heat slightly, pour in 80 ml of red wine, and cook for a couple of minutes until the alcohol evaporates.

5. Add Worcestershire Sauce and Broth

After that, add 1 tablespoon of Worcestershire sauce, 150 ml of beef broth, and a couple more sprigs of fresh thyme. Stir everything together and wait for the broth to come to a boil.

6. Simmer the Filling

Once boiling, reduce the heat to low and let the mixture simmer for 25 minutes, allowing the flavors to meld and the liquid to reduce slightly.

7. Add Peas and Cool

Then, stir in 70 g of cooked peas and cook for a final 5 minutes. Remove the pot from the heat and let the filling cool slightly.

8. Boil the Potatoes

While the filling simmers, prepare the mashed potatoes. Fill a pot with water and bring to a boil over high heat. Add salt and 800 g of peeled potatoes. Cook for about 20-25 minutes, depending on their size, until tender.

9. Mash the Potatoes

Drain the cooked potatoes and place them in a bowl. Mash them with a potato masher or fork until smooth.

10. Make the Mashed Potatoes

Add 50 g of butter and 100 ml of milk, both at room temperature, along with a pinch of salt and ground black pepper. Mix well with a fork until you have a smooth, creamy mashed potato.

11. Assemble the Base

To assemble the cottage pie, spread the beef filling evenly in the bottom of a baking dish.

Carefully spoon the mashed potatoes over the beef, spreading it to cover the filling completely and evenly.

13. Add the Cheeses

Sprinkle 40 g of grated cheddar cheese and 20 g of grated Parmesan cheese evenly over the top of the mashed potatoes.

14. Bake and Serve

Preheat the oven to 200°C (392°F) with the broiler function on. Bake the cottage pie for about 5-6 minutes, or until the cheese is golden and bubbly. Once gratined to your liking, it's ready to serve hot.
