This lemon mousse cake is one of those simple desserts that barely asks for any kitchen experience. There is no oven involved, and the kids in the house can happily help with the crushing and mixing. Light, not too sweet, and packed with real lemon flavor, it is the kind of cake that disappears fast at any table.
Instead of eggs, the mousse relies on whipping cream with powdered sugar and fresh lemon juice and zest. The result is an airy, tangy filling that sits on a crisp cookie base and sets in the fridge, no baking required.
For a tall, eye-catching cake we like a 17 cm round springform pan, though you can go bigger and double the amounts for a 26 cm pan. A shorter version works too by cutting the cream to 300 g, which gives about 8 portions.

Ingredients for Lemon Mousse Cake
This makes 12 servings.
- 6 sheets gelatin
- 500 g whipping cream (at least 35% fat)
- 60 g powdered sugar
- 100 ml lemon juice
- Zest of 2 lemons
- 150 g cookies
- 75 g butter at room temperature

How to Make Lemon Mousse Cake Step by Step
1. Soak the gelatin
First, soak 6 sheets of gelatin in a bowl of cold water for at least 10 minutes. Let them soften fully while you get on with the rest of the preparation.

2. Crush the cookies
Start the base by crushing 150 g of cookies in a food processor if you have one. Otherwise, place them in a freezer bag and run a rolling pin over them until finely crushed.

3. Mix the cookies with the butter
Combine the crushed cookies with 75 g of butter at room temperature. If you used a food processor, you can simply add the butter once the cookies are crushed and pulse it together.

4. Press the base into the pan
Spread the cookie and butter mixture into a pan lined with parchment paper and press it down firmly so it is compact. The bottom of a glass works well for this. Set the pan in the fridge while you prepare the rest.

5. Whip the cream with the sugar
Using a whisk, beat 500 g of whipping cream in a bowl together with 60 g of powdered sugar until it holds soft peaks.

6. Dissolve the gelatin in the lemon juice
Warm 100 ml of lemon juice for a few seconds in a saucepan or the microwave, then add the drained, soaked gelatin sheets along with the zest of 1 lemon. Whisk well until the gelatin is fully dissolved, and reserve the zest of the other lemon for decorating.

7. Fill the pan and chill until set
Fold the whipped cream into the lemon juice with a spatula using gentle folding motions so the cream does not deflate; the juice should not be very hot, so let it cool first if needed. Take the pan with the cookie base out of the fridge and pour in the cream and lemon mixture. Chill for at least 4 hours until set.

8. Unmold and serve
Once the resting time has passed and the mixture has set, unmold the cake and decorate it with the remaining lemon zest and, if you like, a few small pieces of lemon arranged attractively. A few mint leaves also add a nice touch of green.

Tips for the Best Lemon Mousse Cake
Choose the right pan
A 17 cm round springform pan gives a tall, impressive cake, while a 26 cm pan with doubled amounts makes a larger one. To keep the sides from sticking, line the pan with acetate, which lifts away easily once the cake is cold; parchment paper works as a substitute.
Keep lemon juice and zest on hand
A handy trick for making this dessert in very little time is to freeze lemon zest and juice in advance. That way you can whip up this or other sweet treats at a moment's notice, any time you like.
Decorate to taste
Here we finish the cake with lemon zest to reinforce the citrus flavor. Other times it can be covered with lemon curd or have its sides decorated with very thin lemon slices.
