Ingredients for Lime and Mango Tart (for 8 people)
- 300 g Maria cookies (or similar tea biscuits)
- 200 g butter
- 4 egg yolks
- 1 mango
- 4 limes
- 400 g condensed milk
- 200 ml whipping cream (optional)
- A pinch of salt

How to Make Lime and Mango Tart
Preheat the oven to 170 ºC (340 ºF). Grease a 24 cm (9.5 inch) diameter tart pan with a little butter and line it with parchment paper, covering both the base and the sides. Melt the 200 g of butter in a bowl in the microwave or in a saucepan on the stove, being careful not to let it burn. Crush the cookies in a food processor and mix them with the melted butter and a pinch of salt.

Place the mixture in the prepared pan and press it down to form a base and a rim about 3 cm (1.2 inches) high. Bake for 10 minutes. Remove from the oven (do not turn it off) and set aside.

In a bowl, whisk the egg yolks. Add the condensed milk and mix well.

Peel the mango, cut it, and blend it in a blender or with an immersion blender. If the mango is very fibrous, pass it through a fine-mesh sieve or a chinois. Juice the limes and grate the green part of their zest (the white pith is bitter). Add everything to the egg and condensed milk mixture.

Pour the mixture over the prepared crust and bake for 30 minutes.

Remove from the oven and chill in the refrigerator for 3 hours to set. Serve plain or accompanied by whipped cream and a sprinkle of lime zest on top.
