Mango Tart Ingredients for 8 people
For the base:
- 100 g crushed cookies (digestive biscuits or graham crackers)
- 60 g melted and cooled butter
For the mango mousse:
- 10 g powdered gelatin
- 60 g water
- 350 g chopped mango
- 520 g cold whipping cream (minimum 35% fat)
- 80 g white sugar
For the topping:
- 2 sheets of gelatin (or 4g powdered gelatin)
- 30 g water
- 200 g mango jam (or peach or apricot jam as a substitute)

How to Make Mango Tart
To prepare the base of the tart, mix 100 grams of crushed cookies with 60 grams of melted and cooled butter until both ingredients are well combined.

Grease an 18 cm springform pan with a little butter and line the base with parchment paper. Add the cookie mixture and press down lightly until smooth. Set aside in the refrigerator.

For the mango mousse, mix 10 grams of powdered gelatin with 60 grams of water. Let it hydrate for at least 5 minutes.

Place 350 grams of chopped mango and 200 grams of the whipping cream into a blender jug or a bowl. Set aside the rest of the cream for later. Blend until you have a smooth cream with no mango chunks.

Heat the gelatin we were hydrating just until it melts. Pour the gelatin into the mango mixture and blend for a few seconds until it's fully incorporated.

Semi-whip the remaining 320 grams of whipping cream with 80 grams of white sugar. When the cream just begins to thicken and hold its shape, it's ready.

Pour the mango mixture over the semi-whipped cream and fold together using gentle, folding motions.

Once you have a homogeneous mixture, pour it into the pan we had set aside in the fridge. Smooth the surface and place it in the freezer for 20 minutes to let the surface set slightly.

For the topping of the tart, hydrate 2 sheets of gelatin in cold water for 5 minutes.
