How to Make Puffed Rice Step by Step

1. Cook the rice

First, bring water to a boil in a saucepan. When it starts boiling, add 100 g of round rice and cook for 14 minutes or the time recommended by the manufacturer.

2. Drain and preheat the oven

Once the cooking time has passed, drain the rice and preheat the oven to 75 °C (167 °F) with top and bottom heat.

3. Spread on a baking tray

Next, prepare a baking tray with parchment paper and spread the cooked rice on it, making sure it is well distributed and the grains do not stick together.

4. Bake the rice

Bake the cooked rice at medium height for about 50 minutes. During this time, it is advisable to stir it occasionally so it dries evenly. After baking, it is important that the rice is completely dry. If not, extend the baking time a few more minutes.

5. Fry the rice

Once the rice is baked, fry it in plenty of oil, which is the key step to make the rice puff up. To do this, prepare a small saucepan or deep skillet with 300 g of olive oil (the exact amount will depend on the diameter of your container) and when it is very hot, add the rice in small batches. It will start to bubble and the rice grains will swell and rise to the surface.

6. Remove and drain

When the bubbling reduces and the grains have lightly browned, remove the fried rice from the heat and drain with a colander.

7. Let it cool

Let it cool on kitchen paper to remove excess oil.

Tips for the Best Puffed Rice

Dry the rice thoroughly

The oven step is crucial: the rice must be completely dry before frying, or it will not puff properly. If needed, leave it in the oven a few extra minutes at low temperature.

Fry in small batches

Adding the rice in small batches keeps the oil temperature stable and ensures each grain puffs evenly. Use a deep saucepan and enough oil to cover the grains.

Get creative with serving

Enjoy puffed rice with milk, sprinkled over yogurt or salads, or mixed with honey and cinnamon, sugar, or salt and paprika for a savory twist.
