Pumpernickel is one of the most iconic breads in Germany, a dense, dark rye loaf with protected geographical indication status from Westphalia. Our version is simplified for the home kitchen, using ingredients you can find at any supermarket, so you can bake a moist, compact and deeply flavorful loaf without any specialty equipment.
Since whole rye grain is hard to find and takes a long time to soak and cook, we replace it with a mix of sunflower and brown flax seeds that mimic the texture rye gives the classic pumpernickel. Dark beer, cocoa and honey deepen the color and intensify the flavor, while a long, cold rest in the fridge does most of the work for you.

Serve it thinly sliced with smoked salmon and cream cheese for an elegant appetizer, or pair it with pickles, apple compote or your favorite pâté. The result is as surprising as it is delicious, and it keeps beautifully for days.

Ingredients for Pumpernickel
This recipe yields 8 servings.
- 50 g whole rye flour
- 50 g bread flour
- 10 g fresh yeast
- 100 g water
- 100 g sunflower seeds
- 40 g brown flax seeds
- 250 g dark beer
- 300 g whole rye flour
- 10 g salt
- 10 g pure cocoa powder
- 15 g honey

How to Make Pumpernickel Step by Step
1. Make the Preferment
Start by preparing a preferment: mix 50 g of whole rye flour and 50 g of bread flour in a bowl. Dissolve 10 g of fresh yeast in 100 g of water, pour it over the flours and stir to combine. Cover and let the mixture ferment at room temperature for 2 hours, until it looks spongy and active.

2. Soak the Seeds in Dark Beer
At the same time, place 100 g of sunflower seeds and 40 g of brown flax seeds in another bowl and soak them in 250 g of dark beer. Let them rest for as long as the preferment takes to be ready.

3. Combine the Dry Ingredients
Continue with the dough: in a larger bowl, combine 300 g of whole rye flour, 10 g of salt and 10 g of pure cocoa powder. Mix all these dry ingredients together very well.

4. Add the Preferment, Honey and Seeds
Add the preferment, 15 g of honey and the seeds with the beer to the bowl (if you like, reserve a small handful of drained seeds to decorate the top of the loaf). Knead well with your hands until you get a homogeneous mixture; you do not need to knead for long, since we are not looking for gluten development, and rye has very little of it.

5. Chill the Dough Overnight
Cover the dough and let it rest for half an hour at room temperature. Once that time has passed, cover the bowl and put it in the fridge until the next day.

6. Shape, Pan and Proof
In the morning, line a loaf pan with parchment paper. Take the dough out of the fridge, shape it into a log and place it in the pan. Flatten it a little with your hand so the dough fits the base. Cover again and let it rest for 2 to 3 hours, until it rises a little; this will take more or less time depending on the room temperature. To speed it up slightly, you can put the pan in the oven or microwave without turning them on, where it is usually a few degrees warmer and protected from drafts.

7. Bake in a Water Bath
When the bread is almost ready to bake, preheat the oven to 160 °C with top and bottom heat. Prepare a tray with hot water to set the pan in a bain-marie, scatter the reserved seeds over the bread and place it in the oven. Bake for 1 hour at 160 °C and another 2 hours at 130 °C, checking that the tray does not run out of water.

8. Cool and Unmold
Once the baking time is up, crack the oven door open and let it cool down. As soon as you can handle the pan without burning yourself, unmold the bread and let it cool completely; it is even a good idea to let it rest for a full day.

9. Slice and Enjoy
Now you can cut the pumpernickel into slices and enjoy it with your favorite toppings.

Tips for the Best Pumpernickel
Embrace the Home-Style Version
This is a simplified, home-kitchen adaptation made with ingredients you can easily find at the supermarket. It will not meet the protected geographical indication standards, partly because that would require baking it in Westphalia, but the result is still a moist, compact and very tasty bread just like real pumpernickel.
Why Seeds, Beer, Cocoa and Honey
Whole rye grain is hard to find and lengthens the process a lot, since it has to be soaked and cooked. Instead, sunflower and brown flax seeds imitate the texture rye leaves in pumpernickel, while dark beer (which can be alcohol-free), cocoa and honey accentuate the dark color and intense flavor of this bread.
How to Serve It
For serving, pair pumpernickel with smoked salmon and cream cheese, a classic and very elegant combination. It is also delicious with pickles, apple compote or any pâté you like. It is ideal for a different and very original appetizer.
