The mimosa cake, or torta mimosa as it's also known, is a sweet treat of Italian origin, traditionally prepared for International Women's Day, celebrated on March 8th, when mimosa flowers are given as a symbol of respect and celebration.
The decoration of this eye-catching cake is reminiscent of these fluffy yellow bouquets of mimosa blossoms, hence its name. This is a sweet cake and has nothing to do with the savory tart often known by the same name, or mimosa salad. If you enjoy it, check out our guide on Potato Sandwich Bread.

This is a soft and very aromatic cake that isn't at all heavy. To make it, we'll start by preparing a pastry cream, which, once cooled, we'll mix with whipped cream to obtain what's known as diplomat cream—very silky and light.
We'll also prepare some very fluffy sponge cakes which, once cooled, we'll soak in syrup to make them even more moist. We'll cover the whole thing with pieces of sponge cake, which will give the cake a very attractive appearance. Also read my guide on Gluten Free Empanada Dough.
Once the mimosa cake is prepared, we can serve it or reserve it in the refrigerator for a couple of hours so that it takes on more body.We can flavor both the cream and the cake with lemon or vanilla to taste to give it a more aromatic touch. Mimosa cake ingredients
For the diplomatic cream:
- 4 egg yolks M
- 150 g white sugar
- 20 g cornstarch
- 300 ml whole milk
- 1 teaspoon vanilla paste
- 150 ml cold whipping cream (minimum 35% fat)
For the cake:
- 6 eggs M
- 180 g white sugar
- 180 g wheat flour
For the syrup:
- 100 ml of water
- 100 g white sugar

How to make mimosa cake

Cook over medium heat, stirring constantly with a whisk, until the mixture thickens.We remove from the heat, put in a bowl and cover with transparent film so that it does not form a crust.We let it cool completely at room temperature. While the cream is cooling, we will prepare the cake.To do this, we beat 6 M eggs with 180 grams of white sugar until the mixture triples in volume.Preheat the oven to 180ºC with heat up and down. If you enjoyed this, check out our guide on Womens Day Mimosa Cake.

We sift 180 grams of wheat flour and integrate it into the previous mixture with enveloping movements. If you enjoyed this, check out our guide on Gluten Free Bread Rolls.

We distribute the dough into 4 molds with a diameter of 15 cm, which we will have previously greased.Bake for 12-15 minutes, until a toothpick inserted into it comes out clean.If we do not have 4 identical molds, the most practical thing is to bake 2 cakes and cut them in half. We remove the cakes from the oven and let them cool completely in the mold before unmolding.After 20 minutes, they will have cooled and we can unmold them.We reserve. If you enjoyed this, check out our guide on Best Avocado.

We prepare the syrup.To do this, put 100 ml of water and 100 grams of white sugar in a saucepan, let it come to a boil and when the sugar has dissolved, remove it from the heat.We put the syrup in another container and reserve it while it cools. Now it's time to start assembling the mimosa cake.To do this, we will use 3 of the sponge cakes and the diplomatic cream.We will use the fourth cake for decoration.To assemble the cake, we put one of the sponge cakes on the presentation plate and soak it in syrup. We continue putting the second cake and also soak it in syrup, and on top of it, we spread another portion of diplomatic cream and smooth it.We put a third sponge cake on top of the cream, we also soak it in syrup and we completely cover the surface and edges of the cake with the rest of the diplomatic cream.We put it in the refrigerator. Next, we cut the fourth cake that we had reserved into cubes approximately 1 cm on a side.To do this, first we remove the outer crust of the cake to be left with only the crumb, which is what will provide the spongy appearance so characteristic of this cake.To make the cubes, the most practical thing is to cut strips of cake and then cut them into cubes as shown in the following image.

We cover the entire cake with the sponge cake pieces.

At this moment, we already have the mimosa cake ready to serve, although it is best to reserve it for about two hours in the refrigerator so that it takes on more body and enjoy it very cool.
