Guasacaca Recipe: Easy Venezuelan Avocado Green Sauce

Guasacaca is Venezuela's bright, herb-packed green sauce, and it comes together in about five minutes with nothing more than a blender and a handful of fresh ingredients. Ripe avocado gives it body, while green pepper, onion, and garlic bring a savory backbone that is nothing like guacamole once you taste it.

What sets guasacaca apart is its herbal, tangy edge: fresh cilantro and parsley, a splash of white vinegar, and good olive oil lift the avocado into something lighter and sharper. Every Venezuelan cook has a personal version, but avocado, green pepper, onion, garlic, cilantro, and parsley are the constants you can count on.

Serve it as a dip for tequeños or empanadas, spoon it over grilled meats, or set it out as an appetizer with bread and vegetables. The texture should stay slightly coarse, so pulse rather than blend it smooth.

How to Make Guasacaca Step by Step

1. Prep the vegetables

Peel and roughly chop 50 g of onion. Peel and cut 2 garlic cloves, remove the seeds from 1 green pepper and cut it into pieces, and peel and chop 1 avocado.

2. Pulse the base ingredients

Blend the onion, garlic, green pepper, and avocado with short pulses until you have a mixture that is not too fine. Keeping it a little coarse gives the sauce its characteristic body.

Tips for the Best Guasacaca

Pulse, don't purée

Because the sauce is only blended, not cooked, the texture matters as much as the flavor. Short pulses keep it rustic and spoonable, so stop before it turns into a smooth purée.

Balance the tang

The vinegar and olive oil give guasacaca its fresh, lively edge against the rich avocado. Taste after mixing and adjust the vinegar a little if you want more brightness.

Serve it fresh

Guasacaca is at its best right after it is made, when the herbs are still vivid and the avocado is bright green. Pair it with grilled meats, empanadas, or tequeños for a classic Venezuelan spread.
