Hake in sauce is one of those Spanish dishes that tastes far richer than the effort it asks of you. Four hake fillets get a light dusting of flour and a quick sear, then finish cooking in a glossy sauce of garlic, shrimp, sweet paprika, white wine and fish broth. The whole thing comes together in about 25 minutes, which makes it a realistic weeknight dinner that still feels special.

The trick is to dry the fillets well, flour them and seal them in the pan before they ever meet the sauce. That brief sear keeps the fish juicy inside while the sauce clings to the surface, giving you a balance of textures and flavors that a straight simmer never achieves. It is a dish that works as a first course, or as a main if you add a side you like.

How to Make Hake in Sauce Step by Step

1. Dry, salt and flour the hake

First, pat the 4 hake fillets thoroughly dry with absorbent paper and salt them on both sides. Pass them through 2 tablespoons of the wheat flour and shake off any excess so the coating stays thin and even.

2. Sear the hake

Set a deep skillet or casserole over medium-high heat with 1 tablespoon of olive oil and cook the hake fillets to seal them on both sides. Do not cook them through, since they will finish in the sauce later. Set them aside on absorbent paper.

3. Brown the garlic, sauté the shrimp and add flour

Next, chop the 3 garlic cloves and brown them in the same skillet. Add the 100 g of peeled shrimp and sauté them, then add the remaining 1 tablespoon of wheat flour to the pan and cook it briefly.

4. Stir in the paprika

Take the skillet off the heat and stir in 1 teaspoon of paprika, mixing well until it is evenly distributed. Keeping the pan off the burner here keeps the paprika from turning bitter.

5. Add the liquids, parsley and hake, then reduce

Return the skillet to the heat and add 75 ml of white wine, 75 ml of fish broth and 2 teaspoons of chopped parsley. Add the hake back in and bring to a boil, then lower the heat and let it reduce for a few minutes until you have a thick, velvety sauce.

Finally, taste and adjust the salt if needed and add a little ground black pepper. Serve this delicious fish in sauce right away, straight from the pan.

Tips for the Best Hake in Sauce

Dry and sear for juicy fish

Patting the fillets dry, flouring them and sealing them before simmering is what keeps them moist inside. The sauce then coats the surface instead of soaking in, so you get the right balance of texture and flavor.

Choose the right side

Serve this as a first course, or turn it into a full main with a side you enjoy, such as white rice, a simple salad or grilled vegetables. The sauce is generous enough to be spooned over whatever you pair it with.

Mind the heat on the paprika

Stir the paprika in with the pan off the heat so it blends evenly without scorching. A burnt paprika will turn the whole sauce bitter, so this small pause matters.
