If you don't have an oven or simply don't want to turn it on, this microwave pizza is the answer. The dough is made the traditional way, with fresh yeast and a proper rise, so you still get a tender, elastic base rather than a shortcut.
Once the dough is stretched, all that's left is topping it with fried tomato sauce, grated cheese, oregano and black olives, then cooking it for just a few minutes. The classic tomato-and-cheese base is always a good starting point, and from there you can add whatever you like best.
This recipe makes two personal pizzas, so you can serve one now and keep the other half of the dough in the fridge for a couple of days. It's a practical, satisfying main course for busy weeknights.

Ingredients for Microwave Pizza
For 2 servings
- 2 tablespoons extra virgin olive oil
- 200 ml warm water
- 15 g fresh yeast
- 400 g wheat flour
- 1 pinch salt
- 80 g fried tomato sauce
- 100 g grated cheese
- 2 teaspoons oregano
- 14-16 black olives

How to Make Microwave Pizza Step by Step
1. Dissolve the yeast in the water and oil
Put 2 tablespoons of extra virgin olive oil, 200 ml of warm water and 15 g of fresh yeast in a large bowl. Stir with a fork until the yeast is fully dissolved.

2. Add the flour and salt and mix
Add 400 g of wheat flour and 1 pinch of salt. Mix everything together with clean hands until a rough dough forms.

3. Knead until the dough is elastic
Transfer the dough to a clean, smooth, lightly floured surface. Knead for 5 minutes, folding the dough over itself, until it no longer sticks to your hands and feels elastic. If it sticks too much, add a little more flour without overdoing it and keep kneading.

4. Shape into a ball and let it rest
Shape the dough into a ball. Cover it with a clean cotton cloth and let it rest for 1 hour at room temperature.

5. Deflate, divide and stretch the dough
After resting, the dough will have doubled in volume. Press out the air with your hands, divide it into 2 halves and stretch them with a rolling pin into round shapes. You can also use just one half and keep the other in the fridge in a bowl covered with plastic wrap, where it will keep perfectly for a couple of days.

6. Pre-cook the base in the microwave
Place the pizza base in the microwave on parchment paper. If your microwave has a grill function, select it to cook the dough for 5 minutes on the special rack so it stays high. If you don't have a grill, put the pizza on the plate and cook on maximum power for 1 minute; it isn't the best option but it works. Repeat with the other base if you're using it.

7. Top with tomato, cheese, oregano and olives
Take the pizza bases out of the microwave. Spread 40 g of fried tomato sauce over each base, sprinkle with 50 g of grated cheese and 1 teaspoon of oregano. Decorate each pizza with 7-8 black olives.

8. Finish cooking and serve
If your microwave has a grill, cook each pizza for 3 more minutes using that function on the rack. If not, cook each pizza for 1 more minute on maximum power. Every microwave is different, so watch the result to check the base is just right and cook a little longer if needed. Once ready, take each pizza out and serve it freshly made.

Tips for the Best Microwave Pizza
Make the dough from scratch
You could use a ready-made base or a quick mix and skip the rise, but the result won't be the same. Making the dough with fresh yeast and letting it rest gives you a tender, elastic base that holds up well to the toppings.
Choose your favorite toppings
Once the dough is stretched, just shape it and add your favorite ingredients. The classic tomato with cheese and a little oregano is always a solid base, and from there you can add whatever you like best.
Watch the cooking time closely
Every microwave is different, so check the pizza as it cooks to see whether the base is done. If it needs more time, cook it a little longer, but keep an eye on it so the cheese doesn't overcook.
