Ingredients for Huevos a la Riojana
This recipe makes 3 servings as a main course.
- 2 garlic cloves
- 1 onion
- Half a red bell pepper
- Half a green bell pepper
- 3 small ripe tomatoes (about 350 g)
- 2 chorizos
- 2 large potatoes (about 500 g)
- 2 tablespoons olive oil
- Salt
- Ground black pepper
- Oil for frying
- 3 eggs

How to Make Huevos a la Riojana Step by Step
1. Prepare the Ingredients
The first thing we are going to do is prepare all the ingredients. Slice 2 garlic cloves thinly, and cut 1 onion, half a red bell pepper and half a green bell pepper into julienne strips. Grate 3 tomatoes, discarding the skin, and cut 2 chorizos into slices. Peel 2 large potatoes and cut them into slices a little less than half a centimeter thick.

2. Make the Sofrito Base
Place a pot over medium heat with 2 tablespoons of olive oil, and when the oil is hot, add the garlic, the onion and a pinch of salt and cook for about 6-7 minutes. Then add the red and green bell peppers, stir and cook for about 10 minutes.

3. Fry the Chorizo
Next, add the chorizo slices and fry them for a couple of minutes. Remove the chorizo slices from the pot and set them aside.

4. Add the Tomato
Stir in the grated tomato, a pinch of salt and black pepper to taste, and cook for 5 minutes.

5. Return the Chorizo
After that, return the chorizo slices to the pot, stir and cook everything together for a final 2 minutes. Set aside.

6. Fry the Potatoes
Now we are going to fry the potatoes. To do this, place a skillet over high heat with plenty of frying oil, and when the oil is very hot, add the potatoes and fry them for about 10-15 minutes until golden. Take them out of the skillet, draining the oil well, place them on paper towels and sprinkle salt over the top.

7. Fry the Eggs
In the same skillet where we fried the potatoes, we are going to fry 3 eggs. Crack the eggs, add a pinch of salt and place them in the skillet one at a time, or at most two at a time. Fry the eggs over high heat to your liking, depending on whether you like the yolk more or less runny and the white with or without crispy edges. When the eggs are ready, remove them from the skillet, also draining the excess oil well.

8. Plate the Potatoes and Sofrito
To plate the huevos a la riojana, place the potatoes on the base of a large platter and spoon the vegetable and chorizo sofrito on top.

9. Top with the Fried Eggs and Serve
Finish by placing the fried eggs on top, and your huevos a la riojana are ready to serve.

Tips for the Best Huevos a la Riojana
Cut the Potatoes Thin
Slice the potatoes a little less than half a centimeter thick so they cook through and turn golden in the skillet without burning. Even slices also help them fry evenly.
Fry the Eggs to Your Liking
Each person can fry the eggs however they prefer, depending on whether you like the yolks more or less runny and the whites with or without crispy edges. A slightly runny yolk is what makes the sauce so good.
Serve with Plenty of Bread
