How to Make Entremeses
First, we're going to make a quick Russian salad which, although optional, pairs perfectly with the cured meats. To do this, dice 1 large potato and 2 small carrots into small cubes and boil them in salted water for 10 minutes. Drain and mix with 1 small can of drained tuna, 1 can of peas, 1 chopped hard-boiled egg, and 2 tablespoons of mayonnaise. Let it cool in the refrigerator until serving time.

On the serving board, place the Russian salad in individual bowls, glasses, or small cups—shot glasses, for example. Place the rolled serrano ham, sliced chorizo, overlapping salami and inside a glass, and the fuet cut into small pieces on the board.

Next, place all the ingredients that go in bowls: the stuffed olives, Kalamata olives, pickled gherkins, and breadsticks. In the remaining gaps, arrange the crackers and the Manchego cheese cut into thin wedges.

Finish with the grapes, almonds, dates, and cherry tomatoes.
