- 350 g apricots
- 2 sheets gelatin
- 200 ml heavy whipping cream
- 60 g powdered sugar
- 20 ml hot water

How to Make Apricot Mousse Step by Step
1. Hydrate the gelatin
The first thing we're going to do is put 2 sheets of gelatin to hydrate in a bowl with cold water. We let them sit like that for 10 minutes.

2. Wash and cut the apricots
We wash 350 g of apricots very well and cut them into small pieces.

3. Blend the apricots
Next, we blend the apricots with a blender until we get a kind of purée.

4. Whip the cream with the powdered sugar
While the gelatin finishes hydrating, we're going to whip 200 ml of heavy whipping cream. To do this, we put the cream in a bowl and start beating it with electric whisks. When the cream is semi-whipped, we add 60 g of powdered sugar little by little and keep beating until the cream is firmly whipped.

5. Dissolve the gelatin and mix with the apricot purée
Now, we drain the gelatin sheets very well and dissolve them in 20 ml of hot water. We stir until the gelatin dissolves completely, add this mixture to the apricot purée, and mix well with a whisk.

6. Fold the purée into the whipped cream
Next, we're going to incorporate the apricot purée little by little into the bowl of whipped cream and mix it with a spatula or rubber scraper using gentle, folding motions until we have a homogeneous mixture.

7. Portion and chill the mousse
We divide the apricot mousse mixture among 4 glasses or individual containers and put them in the fridge for at least 3 hours until set.

8. Serve the mousse cold
When the apricot mousse is well chilled and firm, it's ready to serve.
