Panko is the Japanese-style bread crumb that has taken kitchens around the world by storm. Its light, flaky texture fries up extra crispy and airy, making it the secret weapon behind golden shrimp, crunchy cutlets, and perfect croquettes. Best of all, you can make it at home in just 15 minutes with a single ingredient.
While panko is now sold in most supermarkets, homemade panko is fresher, cheaper, and incredibly simple to prepare. It works beautifully for Japanese dishes like tonkatsu and fried shrimp, but it also shines in traditional favorites such as breaded croquettes, milanesa-style cutlets, or fried cheese. It is also a perfect substitute when you have run out of regular bread crumbs.
Since the process is so quick, we recommend doubling the quantities so you always have a batch on hand. Once you try it, you will never go back to store-bought.

Ingredients for Homemade Panko
This recipe yields about 4 servings of panko.
- 4 slices of white sandwich bread, crusts removed

How to Make Homemade Panko Step by Step
1. Prepare the Bread
To make this homemade bread crumb, you will need 4 slices of white sandwich bread. If the slices have crusts, remove them so you are left with only the soft crumb. Cut the bread slices into pieces and place them in a food processor or blender. Depending on the size of your processor, you may need to work in several batches.

2. Pulse the Bread
Pulse the bread gradually with short, sharp bursts so it does not become too fine and to avoid forming a paste. Repeat as many times as needed until all the bread slices are crushed. In our case, we processed the bread slices two at a time.

3. Dry the Bread in the Oven
Spread the crushed bread on a baking tray, avoiding clumping it together, as otherwise not all pieces will dry evenly. If you have a large quantity, it is best to use two trays or dry the bread in batches. Place the tray in an oven preheated to 100 °C (212 °F) with a fan if available, and dry the bread for 10 minutes. The goal is not to toast the bread, only to dry it so it becomes crispy.

4. Break Up Any Clumps
After baking, to avoid finding clumps of bread, use a fork to press and separate any pieces of bread that may have stuck together.

5. Store the Panko
After this, your homemade panko is ready to use. You can store it in an airtight container in the refrigerator for a few days or in the freezer.

Tips for the Best Homemade Panko
Keep It Completely Dry
To properly store homemade panko, it is essential that the bread is completely dry after its time in the oven. Otherwise, it could develop mold. Once fully dry and cool, it can be kept in an airtight container in the refrigerator for a few days, no more than 4–5 days.
Freeze for Longer Storage
To keep it longer, you can also freeze it in an airtight bag. In this case, it can be used directly for breading without prior thawing. In any case, panko is so easy and quick to make that you can prepare it whenever you need it.
Use It Anywhere
In Japan, panko is commonly used to bread seafood or white meats. In recent years, it has been adopted and is becoming very popular in many countries. It works for both Japanese dishes and traditional preparations, such as breading delicious croquettes, cutlets, or breaded cheese, making it a perfect resource as a substitute for bread crumbs when you have run out.
