Chinese-style lemon chicken is one of those dishes most of us have ordered at a Chinese restaurant at least once. It is irresistible: the chicken stays tender and juicy inside, crispy on the outside, and it is bathed in a glossy, sweet lemon sauce that clings to every bite.

This version is surprisingly easy to make at home. You marinate thin chicken breast fillets in egg, soy sauce, garlic and ginger, coat them in cornstarch and fry them until golden, then pour over a quick lemon sauce that thickens in just a few minutes.

Everything comes together in about 50 minutes, including 30 minutes of marinating, so it works perfectly as a weeknight dinner. Serve it with steamed rice or noodles to soak up every drop of that sticky lemon sauce.

How to Make Lemon Chicken Step by Step

1. Mix the marinade

The first thing to do is prepare a marinade for the chicken. Put 1 medium egg, 2 tablespoons of soy sauce and 1 finely chopped garlic clove and 5 g of finely chopped ginger in a bowl. Mix well until all the ingredients are perfectly combined.

2. Marinate the chicken

Place 500 g of chicken breast fillets in a dish and pour the marinade over the top. Cover the dish with plastic wrap and let the chicken marinate in the refrigerator for 30 minutes.

3. Mix the lemon sauce

While the chicken marinates, you can prepare the sauce. Put 200 ml of cold water, the zest of 1 lemon, 60 ml of lemon juice, 25 g of brown sugar, 1 teaspoon of honey, 12 g of cornstarch and a little salt in a bowl. Whisk well until the sugar and cornstarch are completely dissolved.

4. Cook the sauce until thickened

Transfer this mixture to a small saucepan and set it over medium heat. Stir constantly with a whisk for about 6 to 7 minutes, until the sauce thickens and turns glossy and syrupy.

5. Coat the chicken in cornstarch

Next, coat the chicken. Put 60 g of cornstarch on a plate and dredge the chicken fillets, well drained of the marinade liquid, until evenly coated.

6. Fry the chicken fillets

Now fry the chicken. Set a skillet over high heat with 300 g of sunflower oil and, once the oil is very hot, fry the chicken fillets in several batches so the oil does not drop too much in temperature. Fry the fillets for 2 minutes on each side, remove them from the skillet, draining off the oil well, and place them on paper towels to remove excess fat.

7. Serve with the lemon sauce

To serve the chicken, cut each breast fillet into 1 cm thick strips and spoon the lemon sauce over the top.

Tips for the Best Lemon Chicken

Choose the right chicken fillets

Use chicken breast fillets that are about half a centimeter thick so they cook quickly and stay juicy. If yours are thicker, slice them horizontally before marinating.

Coat just before frying

It is important to coat the chicken in cornstarch as you go, right before frying, so the cornstarch does not get damp and the chicken stays crispy on the outside. Fry in batches too, so the oil does not drop too much in temperature.

Keep the sauce simple

The sauce could not be easier: just mix all the ingredients and cook the mixture for a few minutes until it thickens and turns syrupy. Whisk constantly so it stays smooth and glossy.
