The New York roll is a round, croissant-like pastry made from rolled strips of puff pastry, baked in metal rings until golden and crisp. It looks like a cinnamon roll but is surprisingly simple to make at home with store-bought puff pastry and a few round molds.

Think of it as a cross between a croissant, thanks to its flaky laminated dough, and a bomboloni, because of its round shape. That is why these pastries are also known as cromboloni or croissant rolls.

How to Make New York Rolls Step by Step

1. Cut the puff pastry into strips

Preheat the oven to 180 °C with top and bottom heat. Roll out 2 sheets of butter puff pastry and cut strips about 3 cm wide.

2. Roll five strips per roll

Roll up the strips of dough. You will need 5 strips in total for each roll.

3. Bake in metal rings with weight

Once the rolls are formed with 5 strips each, place them in the center of a 10 cm metal ring. Put an oven-safe tray or dish on top of the rings so they press down on them; this way, when they start to rise in the oven, their surface stays as flat as possible. Bake for 30 minutes covered. Then remove the tray or dish and bake for 15 more minutes until golden to your liking.

4. Cool and remove the rings

Remove the New York rolls from the oven and let them cool for 15 minutes. Then remove the rings and place the rolls on a wire rack until completely cool.

5. Make two cuts in each roll

Once cooled, make two deep cuts in each roll using a small knife or paring knife.

6. Fill with chocolate hazelnut cream

Place 300 grams of chocolate hazelnut spread in a piping bag and carefully insert the tip into the cuts in the rolls, filling them.

Tips for the Best New York Rolls

Use cold puff pastry

Keep the puff pastry chilled until you are ready to cut and roll it. Cold butter in the dough creates the flaky layers that make these rolls so good.

Weigh down the rings

The tray or dish placed on top of the metal rings is essential. It keeps the rolls flat on top while they puff up in the oven, giving them their signature shape.

Customize the filling

Chocolate hazelnut spread is classic, but you can swap it for pistachio cream, Lotus spread, pastry cream, or chocolate ganache. Match the toppings to your filling.
