Rosquilletas are long, crunchy bread sticks that are a beloved snack all over Spain. Who hasn't opened a bag of these little bread sticks to curb a craving and ended up devouring every last crumb? They are irresistible.

You can find rosquilletas in many flavors, mostly savory but also sweet ones with chocolate bits. Among the savory versions there are sunflower seed, aniseed, cheese, and even quinoa or seaweed varieties. The version we bring you today is the classic recipe made with flour, oil, water and salt.

To give them extra flavor and texture we have added sesame seeds, which you can swap for any other seed or ingredient you like. These crunchy sticks are perfect for dipping, snacking, or serving alongside your favorite dips and cheeses.
Ingredients for Rosquilletas
Serves 5 (makes about 15 rosquilletas)
- 20 g fresh baker's yeast
- 60 g water
- 200 g all-purpose wheat flour
- ½ teaspoon salt
- 50 ml sunflower oil
- 30 g sesame seeds

How to Make Rosquilletas Step by Step
1. Dissolve the yeast
Start by dissolving 20 g of fresh baker's yeast in 2 tablespoons of warm water, taken from the 60 g total water needed for the dough. Make sure the yeast is fully dissolved before proceeding.

2. Mix flour, salt, yeast and water
In a large bowl, combine 200 g all-purpose wheat flour, ½ teaspoon salt, the dissolved yeast, and the remaining water. Stir everything together until a shaggy dough begins to form.

3. Add the sunflower oil
Pour 50 ml sunflower oil into the mixture before you start kneading. This will enrich the dough and give the rosquilletas their characteristic crunch.

4. Knead the dough
Work the dough by hand or using a stand mixer with the dough hook for about 5 to 6 minutes. If kneading by hand, it will take a little longer. The dough should become smooth and elastic.

5. Let the dough rest
Lightly oil a bowl and place the dough inside. Cover and let it rest at room temperature for 2 hours, or until it has doubled in volume.

6. Degas the dough
After the resting time, punch down the dough to release the air before dividing it into portions. This step ensures a uniform texture.

7. Shape the rosquilletas
Divide the dough into about 15 portions of roughly 25 g each. Distribute 30 g sesame seeds among them: incorporate a few seeds into each ball, then roll each ball into a long strip and flatten it slightly.

8. Arrange on a baking tray
Place the shaped strips on a baking tray lined with parchment paper, leaving a couple of centimeters between each one. This prevents them from sticking together in the oven.

9. Bake the rosquilletas
Bake for 40 minutes at 180 °C (350 °F) with both top and bottom heat. Once done, transfer them to a wire rack to cool and become crispy.

10. Cool and serve
Let the rosquilletas cool completely on the rack. They will continue to crisp up as they cool. Serve them once cold.

11. Store in an airtight container
To keep their crunchy texture, store the rosquilletas in an airtight container, where they will stay fresh for a few days.

Tips for the Best Rosquilletas
Use fresh yeast
Fresh baker's yeast gives the best rise and flavor. Make sure it's within its expiration date and dissolve it in warm (not hot) water to activate it properly.
Customize the seeds
Feel free to swap sesame seeds for sunflower seeds, poppy seeds, or even a sprinkle of sea salt. You can also add dried herbs or cheese for extra flavor.
Store properly
Keep the rosquilletas in an airtight container at room temperature. They will stay crispy for several days. If they soften, a quick reheat in the oven will restore their crunch.
