As its name suggests, this Latin American dish consists of sausages and French fries topped with a trio of sauces that complement each other perfectly: ketchup, mustard, and mayonnaise.
It is undoubtedly one of the most popular street foods . Its popularity is such that in Peru, November 3rd is celebrated as National Salchipapa Day.
There are countless variations of the original recipe, adding cheese, a fried egg, fried onions, or crispy bacon. Ingredients of salchipapas
- 400g of potatoes
- Plenty of sunflower oil for frying
- 6 sausages
- Salt to taste
- A pinch of ground black pepper
- 3 tablespoons of ketchup (or to taste)
- 3 tablespoons of mustard (or to taste)
- 3 tablespoons of mayonnaise (or to taste)

How to make salchipapas
The first thing we have to do is peel the 400g of potatoes, wash them and cut them into sticks 6mm wide.

On the other hand, we cut the 6 sausages into slices or diagonally, and set them aside until it is time to fry them.

In a large frying pan, pour plenty of sunflower oil and heat it over medium-low heat, adding the cold potatoes. After 15 minutes, increase the heat and cook for another 5 minutes. This cooking technique will confit the potatoes, making them tender inside while keeping the skin crispy.

After 20 minutes of cooking, the potatoes will be almost cooked, so add the chopped sausages you set aside. Continue cooking for another 5 minutes.

Once fried, remove the potatoes and sausages from the pan and place them on a tray lined with paper towels to absorb the excess oil. Season with salt and pepper to taste.

Once the excess oil has been removed, we proceed to plate the dish, using the fried potatoes as a base.

We place the sausages on top of the potatoes. As this is an informal starter or appetizer, we can serve both portions of this recipe on the same plate to share.

Add the sauces to your liking; I chose to cover the fries with 3 tablespoons of ketchup, 3 tablespoons of mustard, and 3 tablespoons of mayonnaise. If you prefer, they can be served without added sauces so each person can add them to their liking.
