Ají Sauce Recipe: Easy Latin American Spicy Condiment

Ají sauce is a bright, chunky Latin American condiment built on fresh cilantro, tomato, onion and garlic, with chili heat that you control entirely yourself. In just ten minutes of chopping and mixing, you get a versatile dressing that works on grilled meats, fish, fried food, empanadas and even arepas.

In Latin America, ají simply means chili peppers, and this sauce celebrates them in any form you like: fresh, dried, ground, or even built from another hot sauce you already have on hand. Because you make it at home, you decide both the type and the level of heat, so it suits your table perfectly.

Regional versions vary widely. In Colombia it is often made quite spicy to balance mild traditional dishes, in Ecuador carrot is added for sweetness and a gentler bite, and in Puerto Rico a touch of honey creates a lovely sweet-hot contrast. This version is an all-purpose sauce you can adapt however you like.

How to Make Ají Sauce Step by Step

1. Chop the onions

Start with the base ingredients. Finely chop half a white onion and 2 or 3 scallions without the bulb, using both the white and green parts. Keep the cuts small so the flavors blend well and the texture stays pleasant when used as a dressing, then set the onions aside in a bowl where you will mix everything later.

2. Chop the garlic, cilantro and chili

Peel and chop 2 garlic cloves, keeping them as small as possible so their flavor does not dominate; a garlic press or a mortar works perfectly. Wash 1 bunch of fresh cilantro, dry it well and finely chop the leaves. If using fresh ají, cut it, remove the seeds and chop it into small pieces; if using ground ají, add it later to taste.

3. Prepare the tomatoes

Next, take 2 or 3 tomatoes, peel them, remove the seeds and cut them into very small dice. As with the other vegetables, small pieces matter here so the sauce has a smoother, more pleasant texture on the palate.

4. Mix and set the heat level

Once all the vegetables are chopped, combine them in the bowl. At this point add the chopped fresh ají or the ground ají, depending on how much heat you want, tasting as you go until the spice level suits you. If you want a stronger flavor, stir in some hot sauce you have on hand.

5. Season to taste

Finish by adding the juice of 1 or 2 limes, depending on the acidity you want. You can also add 1 or 2 tablespoons of vinegar and 2 tablespoons of mild oil if you like, to balance the flavors. Finally season with salt and ground black pepper to taste, mix well, and your ají sauce is ready to enjoy.

Tips for the Best Ají Sauce

Choose your chili freely

Fresh, dried or ground ají all work here, and the variety should not stop you from trying the recipe. Building the sauce from another hot sauce is also completely valid, so use what you have.

Borrow ideas from other countries

Add carrot like they do in Ecuador for sweetness and a milder intensity, or a touch of honey as in Puerto Rico for a delicious sweet-hot contrast. For a purer chili expression, blend the sauce as many Peruvian versions do.

Serve it with almost anything

This is a true all-rounder: spoon it over grilled meats, fish, fried dishes, empanadas and arepas. Making it at home means you can adjust the type and level of heat exactly as you prefer.
