Lentil lasagna is a meatless take on the classic Italian bake, and it is every bit as comforting as the original. A savory lentil and tomato filling is layered with pasta sheets, blanketed in creamy bechamel and finished with golden parmesan.

It comes together in about an hour and yields two generous portions, making it a great option for a cozy dinner for two. Serve it with a simple green salad and you have a complete, nutritious meal on the table in no time.

Ingredients for Lentil Lasagna
For 2 servings
- 1 garlic clove
- 125 g onion
- 75 g carrot
- 25 g celery
- 2 tablespoons olive oil
- Salt
- 400 g crushed tomato (fresh or canned)
- Ground black pepper
- 1 teaspoon dried oregano
- 400 g cooked lentils
- 4 large lasagna sheets (or as many as needed for your baking dish)
- 30 g butter
- 30 g wheat flour
- 300 ml whole milk
- Nutmeg
- 25 g grated parmesan cheese (or another alternative to taste)

How to Make Lentil Lasagna Step by Step
1. Chop the Vegetables
Finely chop 1 garlic clove and 125 g onion, and cut 75 g carrot and 25 g celery into small cubes.

2. Saute the Aromatics
Place a saucepan over medium heat with 2 tablespoons olive oil. When the oil is hot, add the garlic and saute for a few moments. Then add the onion, celery and a pinch of salt, and cook for 5 minutes. Next, add the carrot, stir and cook for another 5 minutes.

3. Add the Tomato
Next, add 400 g crushed tomato, salt and ground black pepper to taste, and 1 teaspoon dried oregano. Stir and cook for 10 minutes over low heat.

4. Add the Cooked Lentils
Now add 400 g cooked lentils, previously rinsed and drained to remove the preserving liquid, mix well and cook the mixture for a final 5 minutes. At this point the lentil lasagna filling is ready.

5. Cook the Lasagna Sheets
Now cook 4 lasagna sheets. To do this, put a saucepan with water over high heat and as soon as the water comes to a boil, add salt and the lasagna sheets. Cook the pasta over medium-high heat for the time indicated by the manufacturer on the package, which in this case was 6 minutes. Once cooked, remove the sheets from the saucepan and place them on a clean cotton kitchen towel.

6. Make the Bechamel Base
Now make the bechamel. To do this, put a small saucepan over medium heat with 30 g butter. When the butter has melted, add 30 g wheat flour, mix well and cook the flour for 1 minute.

7. Finish the Bechamel
Then add 300 ml whole milk little by little while stirring constantly with a whisk. Add salt, ground black pepper, a pinch of nutmeg and cook for 5 minutes, stirring continuously with the whisk until the mixture has thickened completely and has the texture of bechamel.

8. Assemble the Lasagna
In a baking dish, spread a little bechamel on the base and place a lasagna sheet on top, covering it with the lentil filling. Continue layering the lasagna in this way until all 4 sheets are placed. Then add the bechamel on top so that the last layer is perfectly covered. Finish by adding 25 g grated parmesan cheese on top.

9. Gratinate and Serve
Place the dish in the oven with the broiler function on at 200 °C and gratinate the lasagna for 5 minutes or until the cheese turns golden. Once golden to your liking, serve the lentil lasagna freshly made, to enjoy it nice and hot, which is when it tastes best.

Tips for the Best Lentil Lasagna
Make It Vegan
If you want to make a vegan lentil lasagna, prepare a vegan bechamel without ingredients of animal origin and also replace the parmesan cheese with one of the many vegan alternatives available on the market today.
Choose the Right Lentils and Pasta
For this recipe, the most practical option is to use canned cooked lentils that are ready to use. As for the lasagna pasta sheets, check the manufacturer's instructions, since some are ready to use without precooking while others require it. In this case, we opted for ones that are precooked in water, but if yours do not need it, simply skip that step.
Serve It as a Complete Meal
This is a very interesting and original way to enjoy a good serving of legumes in an attractive and truly tasty presentation. The result is fantastic, and pairing this vegetable lasagna with a simple salad gives you a nutritious meal in no time. Try it and see!
