Lluecas are a traditional sweet from Mota del Cuervo, a town in the province of Cuenca, Spain. They are ring-shaped sweet breads topped with a braided band of dough and finished with sugar moistened with orange blossom water. The dough uses simple pantry ingredients and bakes into a tender, fragrant crumb.

This particular ring-shaped sweet, decorated with a braid, is typically eaten on the second Sunday after Carnival during the Fiesta de las Lluecas, when it is customary to give it to children while singing a traditional song for the occasion.
This dough is perfect alongside a glass of milk or hot chocolate when the weather calls for it, or enjoyed on its own, since its tender crumb barely needs any accompaniment.

Ingredients for Lluecas
Makes 12 servings
- 400 g strong flour
- 3 g dry baker's yeast (or 12 g fresh yeast)
- 70 g white sugar
- 1 pinch salt
- 90 g whole milk
- 50 g mild oil
- 1 M egg
- 60 g orange juice
- Zest of one lemon
- Zest of one orange
- 1 teaspoon orange blossom water
- Beaten egg
- 20 g white sugar
- Half a teaspoon orange blossom water

How to Make Lluecas Step by Step
1. Mix and knead the dough
Put 400 grams of strong flour, 3 grams of dry baker's yeast, 70 grams of white sugar, 1 pinch of salt, 90 grams of whole milk, 50 grams of mild oil, 1 M egg, 60 grams of orange juice and 1 teaspoon of orange blossom water into the bowl of a mixer. Knead everything for about 10 minutes, until you get a smooth and elastic dough.

2. Let the dough rise
Transfer the dough to a lightly greased bowl, cover with plastic wrap and let it double in volume in a warm place. Depending on the room temperature, it can take between 1 and 2 hours.

3. Divide the dough in two
When it has doubled its volume, degas the dough and cut it into 2 pieces, one larger and one smaller. The small one should weigh approximately 200 grams.

4. Shape the large piece into a ring
With the large piece of dough, make a ball and form a ring with a fairly large hole, so that it does not close up during rising and baking.

5. Braid the small piece
With the small piece of dough, roll a rope about 2 centimeters thick, and use it to make a braid.

6. Place the braid on the ring and let rise
Place the dough braid on top of the ring, cover with plastic wrap and let it double in volume for approximately 1 hour.

7. Brush with beaten egg
When the dough has doubled its volume, brush it with beaten egg. Preheat the oven to 180 °C with top and bottom heat.

8. Mix the sugar and orange blossom water
Mix 20 grams of white sugar with half a teaspoon of orange blossom water.

9. Top with sugar and bake
Put the sugar mixture on top of the llueca and take it to the oven for about 30 minutes.

10. Cool on a rack
After the baking time, remove it from the oven and let it cool completely on a rack before serving.

11. Serve
Once cold, you can enjoy this irresistible sweet from Cuenca.

Tips for the Best Lluecas
Respect the rising times
The dough needs to double in volume twice: once before shaping and once after the braid is placed on the ring. Depending on the room temperature, the first rise can take 1 to 2 hours, so judge by volume rather than the clock.
Keep the hole open
Make the hole in the ring fairly large, since the dough will expand during the second rise and in the oven. A generous opening keeps the characteristic ring shape once baked.
Let them cool completely
The lluecas should cool fully on a wire rack before serving. This lets the crumb set and the sugar topping firm up, giving the tender texture that makes them so good with milk or hot chocolate.
