Pijama dessert is one of those restaurant classics many of us have ordered more than once: a silky caramel flan crowned with whipped cream and syruped fruit. It may sound a little old-fashioned, but one spoonful explains why it never went away.

The name has a charming story behind it. It was created at the 7 Portes restaurant in Barcelona by Paco Parellada, and it is said that in the 1950s officers of the US Sixth Fleet, docked in the port, came in asking for the French peach Melba. With no such dessert on hand, they were served a local adaptation instead, and the word "Pijama" stuck because it sounded like "Pêche Melba".

The result is a layered, generous dessert: creamy custard, soft billows of whipped cream and bright fruit in syrup. You need 4 ovenproof flan molds, about 20 minutes of prep and a short bake, plus chilling time in the fridge.

Ingredients for Pijama Dessert

Makes 4 servings.

  • 100 g white sugar
  • 1 tablespoon water
  • 4 medium eggs
  • 120 g white sugar
  • 500 g whole milk
  • 200 g cold heavy whipping cream (at least 35% fat)
  • 4-6 portions syruped peaches
  • 4-6 portions syruped pineapple

How to Make Pijama Dessert Step by Step

1. Prepare the caramel

Start with the caramel: put 100 g of white sugar and 1 tablespoon of water in a small saucepan and set it over medium heat.

2. Let it turn golden

Let the sugar melt and cook until it takes on a toasted caramel color. Keep an eye on it so it does not burn.

3. Pour it into the molds

Pour the caramel into the flan molds, dividing it evenly so the base of each one is coated.

Preheat the oven to 180 °C with top and bottom heat. Set up a water bath and bake the flans for 30-40 minutes, or until a toothpick inserted in the center comes out clean.

Tips for the Best Pijama Dessert

Keep the caramel light

Cook the sugar only until it is a toasted golden caramel; push it darker and it turns bitter against the delicate custard. Swirl the pan rather than stirring so the sugar melts evenly.

Respect the chilling time

The flans need to cool completely in the oven and then rest at least 6 hours in the fridge. This sets the custard and lets the caramel soften into a syrup, so plan ahead.

Make it your own

You can modernize this traditional dessert by swapping the peach and pineapple for other syruped fruit you like, or by serving it with ice cream or wafer rolls on the side.
