Sagargala Recipe: Basque Apple and Cheese Dessert Classic

Sagargala is a traditional Basque dessert that is almost impossible to resist. It layers a tangy apple compote, a light and airy cheese mousse and a tender sponge base soaked in a citrus-spiked syrup, all set in a film-lined mold and chilled until firm.

The magic is in the contrast: the sweet-tart apple layer against the smooth, creamy mousse, finished with soft sobaos that drink up every drop of the syrup. It looks impressive on the table yet comes together simply, with no baking required.

How to Make Sagargala Step by Step

1. Cook the Apples

Wash and cut the apples until you have 250 g with skin and without seeds. Put the apple pieces in a saucepan with 30 g of sugar, 1 cinnamon stick and the juice of half a lemon.

2. Make the Compote

Cook the apple over low heat for 20 minutes, until very soft and compote-like in texture. Remove the cinnamon stick.

3. Hydrate the Gelatin

Hydrate 1 sheet of gelatin in cold water for about 5 minutes.

4. Add Gelatin to the Compote

Drain the gelatin and add it to the compote. Since the compote is still hot, the gelatin will dissolve without any trouble and blend in completely as you stir.

5. Line the Mold

Prepare a mold of about 23 x 10 cm and line it completely with plastic wrap. This will make unmolding the dessert much easier.

6. Add the Compote and Chill

Pour the compote into the mold and smooth it well. Put the mold in the refrigerator so the apple layer begins to set.

7. Make the Syrup

While the apple sets, make the syrup for the sponge base. Put 150 g of water with 150 g of liqueur or wine in a saucepan, along with 80 g of sugar and the peel of 1 orange. Set over high heat and, once the mixture comes to a boil, lower the heat and let it reduce for 5 minutes. Set aside at room temperature.

8. Hydrate the Gelatin for the Mousse

To make the cheese mousse, hydrate 3 sheets of gelatin in a glass of cold water. Leave them to rest for about 5 minutes.

9. Warm the Cream with Gelatin

Once the gelatin has hydrated, heat 100 g of heavy cream, drain the gelatin and stir it into the cream. Set this mixture aside at room temperature so the cream loses some of its heat.

10. Blend the Cheese

Blend 250 g of fresh cheese with 50 g of powdered sugar until you have a fine cream. Set aside.

11. Semi-Whip the Cream

Whip the remaining 350 g of cold heavy cream until semi-whipped. The ideal point is when the whisk begins to leave marks in the cream, which will make the mousse airier.

12. Fold in the Cheese

Fold the blended cheese into the bowl of whipped cream using enveloping movements so you don't knock out the air.

13. Fold in the Cream with Gelatin

To finish the mousse, fold in the cream mixed with gelatin that you set aside to cool, again using enveloping movements.

14. Pour the Mousse Over the Compote

Pour the cheese mousse into the mold, over the apple compote that will have set slightly by now. Smooth the surface.

15. Add the Soaked Sobaos

Now finish the base of the sagargala. Dip one side of the 8 sobaos in the syrup and place them, dipped side down, on the cheese mousse. Fit the sobaos across the whole surface, trimming them if needed so no gaps are left. Put the sagargala in the refrigerator for at least 4 hours, until the mousse sets completely.

16. Unmold

When the dessert is fully set, lift it out of the mold using the plastic wrap and unmold it onto a serving plate.

17. Serve

Tips for the Best Sagargala

Use Up Any Sponge You Have

The sponge base can be made with sobaos, as here, or with any leftover sponge cake you have at home, including ladyfingers. For soaking them, you can use any liqueur or even red wine.

Balance the Layers

The heart of the recipe is a delicious cheese mousse covered with apple compote, which gives an irresistible contrast of flavors and textures. Keep the cream cold before whipping so it reaches the semi-whipped stage easily.

Make It a Day Ahead

This is a very crowd-pleasing dessert that comes together simply and quickly, though it is best prepared in advance, from one day to the next. That way it will be perfectly set and the flavors much more settled. Store the sagargala in the refrigerator and serve it cold.
