Whip 200 ml cold heavy whipping cream (38% fat) until firm.

11. Fold the Strawberry Purée into the Cream
As with the chocolate, first mix the strawberry purée with a couple of tablespoons of cream to equalize textures, then add the rest of the whipped cream, folding gently with a spatula so you do not knock out the air.

12. Layer and Chill the Cake
