For the basil pesto:

How to make burrata salad with tomato and pesto
The first thing we'll do is make the basil pesto. To do this, sauté 35g of pine nuts in a dry pan for 5 minutes, stirring until they are completely toasted. Let it cool. Set aside a tablespoon of pine nuts for garnish.

Next, we grate 25g of Parmesan cheese.

We grind the reserved pine nuts together with 20g of fresh basil, 1 clove of garlic, the grated Parmesan cheese and 75g of virgin olive oil.

For the salad, wash 400g of tomatoes, remove the stems, and slice them half a centimeter thick. Arrange them on a serving plate and lightly salt them.

Place the 200g ball of burrata in the center and drizzle some of the basil pesto over it, along with the reserved basil leaves and pine nuts. Season with salt and pepper to taste. Serve the tomato and burrata salad with the remaining pesto in a bowl, so each person can add it to their liking.
