Ajo colorao is a classic Andalusian starter that turns humble potatoes into something deeply savory and satisfying. The name means "red garlic," and it comes from the vivid paprika- and pepper-stained purée that gives the dish its signature color.
It's a creamy potato purée seasoned with dried peppers, tomato, saffron, cumin and a touch of garlic, often rounded out with flaked cod. Because it tastes just as good the next day, it's a wonderful make-ahead dish for gatherings.
Serve it warm, at room temperature or even chilled, in individual bowls or spread on toasted bread for an easy tapa. With a little good bread alongside, it becomes a truly exquisite bite.

Ingredients for Ajo Colorao
This recipe makes 6 servings.
- 800 g potatoes
- 1 onion
- 3 garlic cloves
- 3 dried peppers
- 2 red tomatoes
- Salt
- 250 g desalted cod
- A few saffron threads
- 1 tablespoon ground cumin
- 1 teaspoon sweet paprika
- 40 g extra virgin olive oil

How to Make Ajo Colorao Step by Step
1. Peel and Cut the Vegetables
Peel 800 g of potatoes and cut them into large chunks. Peel and cut 1 onion the same way, then peel 3 garlic cloves.

2. Prepare the Peppers and Tomatoes
Cut off the stems and remove the seeds from 3 dried peppers, then rinse them under the tap. Remove the stems from 2 red tomatoes and score a cross in the base of each so they peel easily later.

3. Boil the Vegetables
In a pot, combine the potatoes, onion, 2 garlic cloves (reserve the remaining garlic to add raw), dried peppers and tomatoes. Cover with water, add salt and bring to a boil. Keep boiling for about 20 minutes, until the potatoes are fully cooked.

4. Cook the Cod
Halfway through cooking, add 250 g of desalted cod to the pot. Let it cook with everything for 5 to 10 minutes, depending on the thickness of the piece, then lift it out onto a plate.

5. Toast the Spices
In a small skillet, lightly toast a few saffron threads, reserving some for the final plating. Add 1 tablespoon ground cumin and 1 teaspoon paprika, stir for a few seconds and set aside.

6. Peel the Tomatoes and Scoop the Peppers
Once the potatoes are cooked, remove the tomatoes from the pot and peel them. Remove the peppers too and scrape out their flesh with a small spoon.

7. Blend the Vegetables with the Spices and Oil
Put the chopped tomatoes, pepper flesh, onion, cooked garlic and raw garlic into a blender. Add the toasted spices as well. Blend everything while pouring in 40 g of extra virgin olive oil in a thin stream.

8. Mash the Potatoes
Drain the potatoes, saving the cooking water. Put them in a large bowl and mash them with a potato masher, a food mill or simply a fork.

9. Flake the Cod and Mix It In
Flake the cod and mix it into the mashed potatoes, keeping a few flakes aside to garnish the dish.

10. Fold in the Tomato and Pepper Cream
Fold the cod and potato mixture into the tomato and pepper cream and mix very well. Adjust the salt and, if it seems too thick, add a little of the reserved cooking water.

11. Serve the Ajo Colorao
Serve the ajo colorao in a deep plate with the reserved cod flakes on top, a few saffron threads and a thin drizzle of extra virgin olive oil. We recommend serving it with some toasted bread.

Tips for the Best Ajo Colorao
Desalt the Cod in Advance
The only real care this recipe needs is the cod: if you use salted cod, it must be desalted beforehand and with enough time so it's ready before you start cooking.
Make It Ahead
Ajo colorao is excellent freshly made, but it's just as good the next day. That, plus how easy the ingredients are to find, makes it a handy dish for any time of year.
Serve It Your Way
It can be eaten hot, warm or even cold. Serve it in individual bowls or spread on toast for a quick snack or tapa.
