Rooster combs are a traditional tapa from Zamora and other parts of Castilla y León, and there are only a handful of places where you can taste them. That is exactly why making them at home is such a great option. This braised version simmers them slowly until they turn soft and gelatinous, then dresses them in a simple, lightly spicy sauce.

Beyond braising, rooster combs can also be fried, grilled or confit. The key is always to cook them first until tender, and a pressure cooker is the best tool for the job, though doubling the cooking time in a regular pot works just as well. Once cooked, you can finish them any way you like.

For this dish we build a sauce with a touch of heat, made from just a few ingredients that pair perfectly with the soft, gelatinous combs. A majado of raw almonds thickens it beautifully, and the result is so good you will want to keep dipping bread into it.
Ingredients for Braised Rooster Combs
This recipe makes 4 servings as a main course.
- 500 g rooster combs
- 1 teaspoon black peppercorns
- 1 clove
- 1 bay leaf
- Salt
- 1 liter water
- 50 ml olive oil
- 2 garlic cloves
- 1 large onion
- 200 g crushed tomato
- 1-2 cayenne peppers
- 1 teaspoon sweet paprika
- 10 g raw almonds

How to Make Braised Rooster Combs Step by Step
1. Clean the Rooster Combs
Before cooking, wash the 500 g of rooster combs well to remove any impurities. Then use scissors to trim the outer part of the combs if needed, since they can sometimes come with a little dirt.

2. Simmer Them with Aromatics
Place the cleaned combs in a pot with 1 teaspoon of black peppercorns, 1 clove, 1 bay leaf and salt. Pour in 1 liter of water and cover the pot.

3. Cook Until Tender but Firm
If using a pressure cooker, which is recommended, cook them for 45 minutes to 1 hour. With a traditional pot, the cooking time is around 2 hours. Either way, once the time is up, check their doneness by cutting one with a knife. They should be soft but firm, without falling apart.

4. Strain and Reserve the Broth
After cooking the rooster combs, strain the broth and set it aside.

5. Sauté the Garlic and Onion
While the combs cook, you can get started on the sauce. Put 50 ml of olive oil in a frying pan. When the oil is hot, gently sauté 2 chopped garlic cloves and 1 large chopped onion over medium heat. Add a little salt and cook until the mixture starts to brown.

6. Add the Tomato and Cayenne
Add 200 g of crushed tomato and 1 or 2 cayenne peppers, depending on how spicy you want it. Cook for about 10 minutes to concentrate the sauce.

7. Pour in the Cooking Broth
Pour the reserved cooking broth from the rooster combs into the sauce.

8. Add the Combs and Paprika
Stir in the cooked rooster combs and 1 teaspoon of sweet paprika, and cook for a couple of minutes over low heat.

9. Make the Almond Majado
Make a majado by grinding 10 g of raw almonds with 1 tablespoon of the sauce to help form a paste.

10. Thicken the Sauce
Add the majado to the pan with the combs and cook for 10 more minutes over low heat.

11. Serve
Serve the braised rooster combs hot, with bread on the side for dipping into the sauce.

Tips for the Best Braised Rooster Combs
Cook Them Before Anything Else
No matter how you plan to finish them, the combs must be cooked first until tender. A pressure cooker gets them there in 45 minutes to an hour, while a traditional pot needs about 2 hours.
Check the Texture with a Knife
Cut into one comb to test doneness. You want them soft but firm, holding their shape without breaking apart, so they stay pleasant in the mouth.
Adjust the Heat to Taste
Use 1 or 2 cayenne peppers depending on how much spice you want. The almond majado thickens the sauce, so it clings to the combs and is perfect for mopping up with bread.
