Cañas de crema are golden, crisp pastry tubes filled with silky vanilla pastry cream and rolled in sugar while still warm. This traditional Galician dessert pairs a shatteringly crunchy shell with a soft, cool filling, creating one of the most satisfying contrasts in Spanish baking.
The dough itself is made with just a handful of pantry staples: flour, mild oil, water and a splash of sweet wine. The pastry cream comes together on the stovetop with egg yolks, sugar, cornstarch, vanilla and whole milk, then chills until thick and spoonable.
You will need metal canutillo molds to shape the strips of dough before frying. They are inexpensive, easy to find in baking supply shops, and once you taste these cream-filled canes, you will want to make them again and again. Serve them with coffee or tea for a truly memorable treat.

Ingredients for Cañas de Crema
This recipe makes 25 pastries.
- 85 g mild oil
- 75 g water
- 25 g sweet wine
- 250 g wheat flour
- Oil for frying
- 40 g white sugar, for coating
- 4 medium egg yolks
- 120 g white sugar
- 50 g cornstarch
- 1 teaspoon vanilla paste
- 480 ml whole milk

How to Make Cañas de Crema Step by Step
1. Mix the Liquids for the Dough
Start by making the dough for the cañas. In a bowl, combine 85 grams of mild oil with 75 grams of water and 25 grams of sweet wine.

2. Add the Flour
Add 250 grams of wheat flour to the liquids little by little until you have a smooth, homogeneous dough.

3. Chill the Dough
Shape the dough into a ball, cover it with plastic wrap and refrigerate it for 30 minutes.

4. Mix the Pastry Cream Base
While the dough rests, prepare the pastry cream. In a saucepan, mix 4 medium egg yolks, 120 grams of white sugar, 50 grams of cornstarch and 1 teaspoon of vanilla paste.

5. Add the Milk
Slowly pour in 480 ml of whole milk, integrating it into the previous mixture. Once the mixture is homogeneous, place it over low heat, stirring constantly, and cook until it thickens.

6. Thicken and Cool the Cream
When the mixture thickens, remove the saucepan from the heat, transfer the cream to a bowl, cover it with plastic wrap and let it cool to room temperature. Then store the cream in the refrigerator until ready to use.

7. Roll Out the Dough
After the 30-minute rest, take the dough out of the refrigerator and roll it out into a roughly square or rectangular shape, as thinly as possible.

8. Cut the Dough into Strips
Cut the dough into strips about 25 cm long and 2 cm wide.

9. Wrap the Strips Around the Molds
Wrap each strip of dough around a metal canutillo mold specially designed for this purpose. If you do not have enough molds for all the dough, that is no problem, as you can reuse them as you fry each caña and remove its mold, until you finish the dough.

10. Fry the Cañas
Heat the frying oil in sufficient quantity to reach a depth of two fingers, ideally to a temperature between 170-180 ºC. Fry the molds for a few minutes until they are golden to your liking.

11. Drain the Excess Oil
Remove the molds from the fryer and place them on absorbent kitchen paper to remove excess oil. Carefully remove the metal molds while the fried cañas are still hot, as this is easier than when they have cooled.

12. Coat in Sugar
As you remove each mold, roll the cañas in 40 grams of white sugar.

13. Fill with Pastry Cream
Once you have fried all the molds, coated them in sugar and they have cooled completely, transfer the cream to a piping bag and fill each caña with the cream. Ideally, fill the cañas just before serving so they do not soften.

Tips for the Best Cañas de Crema
Choose Quality Ingredients
This recipe calls for very simple ingredients, so the key to success lies in their quality and in your skill at achieving a perfectly crisp dough and a soft, silky cream filling.
Use the Right Molds
The canutillo or metal molds used to shape the strips of dough can be found at any baking supply shop, both in physical stores and online. They are easy to find, relatively inexpensive, and once you try these cream-filled cañas, you will see the investment was worth it.
Worth the Effort
Although the process of making these fried cañas may seem laborious, these cream-filled tubes are worth preparing in their best homemade version so you can enjoy them on any occasion, accompanied by coffee or tea.
