Chocolate mint ice cream brings together the deep, rich flavor of dark chocolate and the cool freshness of mint in one irresistibly creamy scoop. This homemade version uses a custard base infused with fresh mint leaves, then studded with finely chopped dark chocolate for a bit of crunch in every bite.

It is a frozen dessert that looks as good as it tastes, thanks to a gentle tint of green coloring that hints at the mint inside. Serve it after dinner, pile it into cones, or keep a tub in the freezer for whenever a chocolate craving strikes.

The method is straightforward: make a light custard, chill it thoroughly, then churn it and fold in the chocolate. You do not need any special skills, just a little patience while the base cools and freezes to its creamiest texture.

How to Make Chocolate Mint Ice Cream Step by Step

1. Dilute the Cornstarch

Start by mixing 50 ml of the milk with the 10 grams of cornstarch. Whisk very well until the cornstarch has completely dissolved and there are no lumps left.

2. Heat the Milk, Cream and Sugar

Next, bring the remaining 200 ml of milk, the 500 ml of heavy cream and the 150 grams of white sugar to a boil. As soon as it starts to bubble, remove it from the heat.

3. Infuse the Mint

Add the 10 grams of mint leaves and let them infuse for about 10 minutes, then remove the leaves. If you prefer mint extract, stir it in at this point to taste and mix well.

4. Beat the Egg Yolks

Whisk the 3 egg yolks in a bowl until smooth and slightly pale. This helps them blend evenly into the warm custard without scrambling.

6. Combine with the Yolks

7. Tint the Ice Cream

Color the mixture with half a teaspoon of green paste food coloring. Adjust the color with a little more if needed, but add it gradually so the shade does not become too intense.

8. Thicken the Mixture

Place the saucepan over low heat and let the mixture thicken, stirring constantly so it cooks evenly and does not catch.

9. Chill the Base

Transfer the mixture to another container and let it cool to room temperature. Then refrigerate it for at least 8 hours so it chills completely.

10. Churn the Ice Cream

Churn the ice cream according to your ice cream maker's instructions. Without a machine, put the mixture in a lidded container in the freezer and whisk it well every 30 minutes to 1 hour for roughly the first 4 hours of freezing.

11. Chop the Chocolate

Meanwhile, finely chop the 80 grams of dark chocolate into small pieces so it blends evenly through the ice cream.

12. Fold In the Chocolate

Transfer the churned ice cream to a lidded container and add the chopped chocolate. If you churned it without a machine, wait until the mixture has thickened before adding the chocolate. Mix well and freeze for 24 hours.

Tips for the Best Chocolate Mint Ice Cream

Choose Your Mint Wisely

Fresh mint leaves give a clean, natural flavor, but mint extract or spearmint works well too and is easy to find in baking shops. The better the quality of the extract, the richer the final ice cream will taste.

Chop the Chocolate Finely

Cut the dark chocolate into very small pieces so it mixes and integrates completely with the mint flavor. On a lazy day, chocolate chips or grated chocolate are perfectly fine substitutes.

Adjust the Color Gradually

Add the green coloring little by little rather than all at once. It is far better to build up a soft tint than to end up with an ice cream that is too intensely colored.
