How to make stuffed eggs with avocado and salmon

First, we're going to boil 4 eggs. To do this, place them in a pot of cold water and bring it to a boil over high heat. Boil the eggs for 10 minutes from the time the water starts boiling, stirring occasionally to ensure the yolks stay centered. Run the boiled eggs under cold water to stop the cooking process. Once cool, peel them, cut them in half, and remove the yolks. Set the egg whites aside in the refrigerator.

Place the egg yolks in a bowl along with the pulp of 2 avocados, the juice of 1 lime, and 3 tablespoons of mayonnaise. Mash these ingredients or blend them in a food processor until you have a smooth mixture.

Transfer the mixture to a piping bag and refrigerate until chilled. If you don't have a piping bag, you can use a freezer bag by snipping off one corner. Alternatively, you can simply use a spoon to fill the egg cups with the filling.

We chop 250g of smoked salmon, reserving some larger pieces for decoration.
